LEMON-APRICOT CHICKEN

Lemon-Apricot Chicken image

Do you love lemon or orange chicken at Chinese restaurants? Then this recipe is for you! It's from Betty Crocker's Bisquick Cookbook. It is divine. The ginger adds a subtle yet distinct tangy-ness to the sauce; I haven't tried it yet, but I wonder if orange marmalade would work as a substitute for the apricot preserves.

Tips:

  • Mise en place: Before you start cooking, make sure you have all your ingredients and equipment ready. This will help you stay organized and prevent any scrambling.
  • Use a sharp knife: A sharp knife will make it easier to cut your chicken and vegetables. It will also help you avoid tearing the meat, which can make it tough.
  • Do not overcrowd the pan: When you are searing the chicken, make sure you do not overcrowd the pan. This will prevent the chicken from cooking evenly.
  • Cook the chicken until it is cooked through: Use a meat thermometer to ensure that the chicken is cooked to an internal temperature of 165 degrees Fahrenheit.
  • Let the chicken rest before serving: After you have cooked the chicken, let it rest for a few minutes before serving. This will help the juices redistribute throughout the meat, making it more tender and flavorful.
  • Serve with your favorite sides: This dish can be served with a variety of sides, such as rice, noodles, or vegetables.
