Time 30m

Number Of Ingredients 10

3 lb sweet potatoes, cooked, peeled and cut up
1 c packed brown sugar
5 tsp cornstarch
1/4 tsp salt
1/8 tsp ground cinnamon
1 c apricot nectar
1/2 c hot water
2 tsp grated orange peel
2 tsp butter or margarine
1/2 c chopped pecans

Steps:

  • 1. Place sweet potatoes in a greased 13"x9"x2" baking dish and set aside.
  • 2. In a saucepan, combine brown sugar, cornstarch, salt and cinnamon; stir in apricot nectar, water and orange peel. Bring to a boil, stirring constantly. Cook and stir for 2 minutes more. Remove from the heat; stir in butter and pecans.
  • 3. Pour over sweet potatoes. Bake, uncovered, at 350 degrees for 20-25 minutes or until heated through.

Tips:

  • Choose the right sweet potatoes: Look for firm, unblemished sweet potatoes that are about the same size so they cook evenly.
  • Wash and peel the sweet potatoes: Scrub the potatoes well under running water to remove any dirt or debris. Then, use a sharp knife to peel the potatoes.
  • Cut the sweet potatoes into uniform pieces: This will help them cook evenly. If you are making sweet potato fries, cut them into 1/2-inch thick wedges. For roasted sweet potatoes, cut them into 1-inch cubes.
  • Coat the sweet potatoes in oil and spices: This will help them to brown and caramelize in the oven. You can use olive oil, coconut oil, or melted butter. Season the potatoes with salt, pepper, garlic powder, and paprika.
  • Roast the sweet potatoes until they are tender: This will take about 20-30 minutes, depending on the size of the potato pieces.
  • Make the apricot glaze: While the sweet potatoes are roasting, make the apricot glaze. In a small saucepan, combine apricot preserves, orange juice, honey, and cinnamon. Bring the mixture to a simmer and cook for 5 minutes, or until it has thickened slightly.
  • Glaze the sweet potatoes: Once the sweet potatoes are roasted, remove them from the oven and brush them with the apricot glaze. Return the potatoes to the oven and roast for an additional 5 minutes, or until the glaze is set.

Conclusion:

Apricot-glazed sweet potatoes are a delicious and easy side dish that can be enjoyed with a variety of meals. They are perfect for a weeknight dinner or a special occasion. The combination of sweet and savory flavors makes them a hit with everyone. So next time you are looking for a simple but impressive side dish, give apricot-glazed sweet potatoes a try.
