Tips:
- Use bone-in, skin-on chicken thighs for the best flavor and texture.
- Don't skip marinating the chicken. This step helps to tenderize the meat and infuse it with flavor.
- Be sure to preheat your grill to medium-high heat before cooking the chicken.
- Cook the chicken over indirect heat for most of the cooking time. This will help to prevent it from drying out.
- Baste the chicken with the apricot glaze every few minutes during the last 10 minutes of cooking.
- Let the chicken rest for a few minutes before serving. This will help the juices to redistribute and make the meat even more tender.
