½ cup roughly chopped candied ginger
½ teaspoon baking powder

6 tablespoons butter, softened
½ cup Sugar In The Raw®
½ cup Stevia In The Raw®
1 teaspoon vanilla extract
3 large eggs
½ cup spiced rum
½ cup butter, softened
½ cup Stevia In The Raw®
1 tablespoon spiced rum

  • Preheat oven to 325 degrees F. Spray a 9x5-inch loaf pan with cooking spray and line with parchment so it extends over the 2 long sides of the pan.

1/2 cup water
1 tablespoon rum
2 mangoes, peeled, halved and thinly sliced
4 kiwi fruits, peeled and sliced
1 lb cake, sliced
1 cup whipped cream
