Categories     Chicken Breast

Time 40m

Yield 4 serving(s)

Number Of Ingredients 8

1/2 cup apricot preserves
2 tablespoons ketchup
1 tablespoon Dijon mustard
1/2 teaspoon ground ginger
4 boneless skinless chicken breasts (6 ounces each)
1/4 cup toasted hazelnuts, chopped
6 ounces long grain and wild rice blend
1 tablespoon olive oil

Steps:

  • Heat oven to 400°. Spray a baking dish with nonstick cooking spray.
  • Whisk together the apricot preserves, ketchup, mustard and ginger. Reserve 1/4 cup of the mixture.
  • Place chicken in the prepared baking dish and spread the remaining apricot mixture over the top. Bake at 400° for 20 to 25 minutes or until internal temperature reaches 160° on an instant-read thermometer.
  • Make rice following package directions, using the olive oil.
  • To serve, sprinkle the hazelnuts over the chicken breasts and stir the reserved apricot mixture into the cooked rice.

Tips:

  • Choose ripe apricots: Look for plump, unblemished apricots with a deep orange color. Avoid apricots that are green or have bruises or soft spots.
  • Use good quality Dijon mustard: A good Dijon mustard will add a lot of flavor to the glaze. Look for a Dijon mustard that is made with whole grain mustard seeds and has a sharp, tangy flavor.
  • Do not overcrowd the pan: When searing the chicken, make sure to give each piece plenty of space in the pan. This will help the chicken to cook evenly and prevent it from steaming.
  • Cook the chicken until it is cooked through: Use a meat thermometer to check the internal temperature of the chicken. Chicken is cooked through when it reaches an internal temperature of 165 degrees Fahrenheit.
  • Let the chicken rest before serving: This will help the juices to redistribute throughout the chicken, making it more tender and flavorful.

Conclusion:

Apricot Dijon glazed chicken is a delicious and easy-to-make dish that is perfect for a weeknight meal. The combination of sweet apricots, tangy Dijon mustard, and savory chicken is sure to please everyone at the table. Serve it with your favorite sides, such as mashed potatoes, roasted vegetables, or a simple salad.
