Steps:
- Drain pineapple and save the juice for topping.
- Dissolve Jello in the 2 cups of hot water.
- Fold in apricots (with juice), drained pineapple, and marshmallows. Chill until firm.
- To make the topping, combine sugar and flour in a saucepan.
- Blend in egg and butter.
- Add pineapple juice, and cook over low heat, stirring constantly until thickened.
- Cool thoroughly.
- Fold in whipped cream, and spread topping over congealed salad.
- Sprinkle with grated cheese, and chill.
Tips:
- Whether using apricots or peaches, select ripe and flavorful fruits for the best results.
- To easily peel the apricots, score an "X" on the bottom of each fruit and immerse them in boiling water for 30 seconds. Then transfer them to cold water and the skins will slip right off.
- If using fresh peaches, you can peel them using the same method as for apricots. If using frozen peaches, thaw them before using.
- The amount of sugar you add to the recipe will depend on the sweetness of the fruit. Taste the fruit before adding sugar and adjust the amount accordingly.
- If you want a thicker apricot or peach delight, you can add a cornstarch slurry to the mixture. To make a cornstarch slurry, whisk together equal parts cornstarch and water until smooth. Then, add the slurry to the fruit mixture and bring to a simmer, stirring constantly until thickened.
- Serve apricot or peach delight warm or chilled. It can be enjoyed on its own, or served with ice cream, yogurt, or whipped cream.
