1 cup chopped dried apricots
water
1/4 cup sugar
1 tbsp butter
1/8 tsp freshly ground nutmeg (optional)
1/4 tsp ground cinnamon
2 tbsp orange juice
1 1/3 cups butter (room temperature)
8 oz cream cheese (room temperature)
2 2/3 cups white whole wheat flour (or all-purpose flour)
1 tsp vanilla extract (optional, but recommended)

Steps:

  • Add chopped dried apricots and enough water to come 1 inch above apricots in a saucepan. Simmer for 15-20 minutes, or until thickened.
  • Stir in sugar, butter, nutmeg (optional), cinnamon and orange juice. Cook a bit longer, until texture is like jam.
  • Stir, cool and store in refrigerator in an airtight container until ready to use.
  • Add cream cheese and butter to the bowl of a stand mixer.
  • Using the beater blade, combine ingredients on medium-high speed until well blended. Add vanilla, if using, and mix until incorporated. Turn mixer off, add flour and mix on low speed just until combined and a ball of dough forms. The dough should be thick.
  • Form into a ball and wrap in plastic wrap. Refrigerate at least one hour, or overnight.
  • Preheat oven to 400 degrees.
  • Form dough into walnut size balls and place into a mini muffin or tart pan. Using a tart tamper dusted with flour, press down on each ball to form the tart shape.
  • Fill each tart with a rounded teaspoon of filling (homemade or store-bought apricot jam). Bake for 10 minutes or until very lightly golden. Remove pan from oven and cool completely on wire racks.

2 sheets butter puff pastry (See Note 1)
6 tbsp cream cheese (at room temperature. See Note 2)
1 tsp vanilla extract (See Note 3)
4 tbsp icing/confectioners' sugar (See Note 2)
8 canned apricot halves (See Note 4)
1 egg (lightly beaten)
2 tbsp demerara sugar (See Note 5)
2 tbsp apricot jam

Steps:

  • Line a baking tray with baking paper - See Note 6Remove the pastry from the freezer and defrost - See Note 7Preheat oven to 200 degrees C (400 F).
  • Drain the canned apricots through a sieve. Then place on some kitchen towel, cut side down, to remove as much moisture as possible and avoid making your pastries soggy.
  • Combine cream cheese, vanilla and icing/confectioners' sugar and mix well.
  • Cut the puff pastry into eight 10 cm/4" squares.
  • To make the shape that I have used, fold the square loosely in half diagonally to form a triangle. - See Note 8.
  • To shape the pastry, use a very sharp knife and make two cuts along the outside edge of the triangle, about ½ " wide, but not cutting right through to the tip of the triangle.
  • Open the triangle and gently lift the right-hand strip of pastry over to the left, placing it on the square of pastry.Place pastry on baking tray to shape and top. (It is difficult to move once assembled).
  • Repeat with the left-hand strip, taking it to the right-hand side. The pastry creates a frame around the filling.
  • Divide the cream cheese mixture between the pastry shapes.
  • Place an apricot half on top of the cream cheese.
  • Brush the edges of the pastry with the beaten egg and sprinkle with a teaspoon of demerara sugar.
  • Bake in the preheated oven for 15-20 minutes until the pastry becomes golden-brown.
  • Meanwhile, add the jam to a small saucepan and heat over medium heat, adding a teaspoon of water if necessary to thin it a little. If there are large pieces of jam it will be best to push the jam through a sieve. If not, brush each apricot with some of the jam to give them a nice shine.
  • Allow the pastries to cool for a few minutes before serving. However, if not serving immediately, store the cold pastries in an airtight container in the fridge for a day or two or freezer if keeping longer. Re-heat for a few minutes before serving.

1 vanilla bean, split lengthwise

2 tablespoons apricot preserves
6 apricots, thinly sliced

Steps:

  • Preheat oven to 350°F. Blend nuts, 6 tablespoons sugar and flour in processor until nuts are finely chopped. Add butter. Process until mixture begins to clump together, divide equally among four 4-inch-diameter tartlet pans with removable bottoms. Press mixture onto bottom and up sides of pans. Bake until crusts are golden and set, about 13 minutes. Transfer pans to racks; cool completely.
  • Combine wine, water and 1/3 cup sugar in large nonstick skillet. Scrape in seeds from vanilla bean; add bean. Stir over medium heat until sugar dissolves. Increase heat and boil until liquid is slightly thickened and reduced to generous 1/2 cup, about 5 minutes. Discard vanilla bean. Cool syrup to room temperature.
  • Combine cream cheese, preserves and 2 tablespoons vanilla syrup in processor; purée until smooth. Spoon filling into crusts; smooth tops. Refrigerate until set, about 1 hour. (Can be made 1 day ahead. Keep tartlets chilled. Cover syrup and let stand at room temperature.)

5 -6 large apricots, pitted and quartered
1/4 cup apricot jam, heated
3 amaretti cookies, crushed (Italian macaroons)

Steps:

  • Preheat oven to 400 degrees.
  • Blend almond paste and 3T sugar in food processor until finely chopped.
  • Add cream cheese, egg yolk, and vanilla.

  • Unroll pie crust on heavy rimmed baking sheet.

  • For crust:

Place poached apricots over preserves, covering crust completely and overlapping slightly. Using pastry brush, brush beaten egg over edges of crust. Roll out second dough disk between 2 sheets of parchment paper to 12-inch round. Remove top piece of parchment; using 1-inch-diameter cookie cutter, cut hole in center of top crust. Turn crust over onto filling. Remove second piece of parchment paper. Press around crust edges to seal. Cut off excess dough to make top crust flush with tart pan sides. Brush crust with beaten egg and sprinkle with 3 tablespoons sugar.
  • Bake tart until cornmeal crust is golden brown, about 45 minutes. Transfer apricot tart to rack. Cool 30 minutes. Remove tart from pan and cool completely. Steps:

  • To make the crust: Preheat oven to 350 degrees with rack in center. Brush a 8-by-11-inch tart pan with removable bottom with butter.
  • Place the almonds and 1 tablespoon sugar in the bowl of a food processor, and pulse until the almonds are finely ground. Add the butter, and process until combined. Pulse in the flour, the remaining 1 tablespoon plus 1/4 teaspoon sugar, and the almond extract until combined.
  • Transfer the crumbly dough to the prepared pan. Using your fingers, pat out dough evenly to make a thin crust along the bottom and up the sides of the pan. Chill the crust 30 minutes.
  • Bake crust until golden, 20 to 25 minutes. Transfer to a wire rack to cool.
  • To make the filling and assemble the tart: Preheat oven to 350 degrees. Spread the almond slices in a single layer in a rimmed baking sheet; toast in oven until golden, about 10 minutes. Shake the pan halfway through baking to make sure the nuts toast evenly. Set aside.
  • In a large bowl, combine 1/2 cup granulated sugar, salt, all-purpose flour, almond flour, and baking powder; whisk together. Whisk in the eggs, melted butter, and half-and-half until well combined. Pour the filling into the baked crust.
  • Arrange the apricot halves, cut sides up, on top of the filling, packing the fruit closely together. Sprinkle the tops of the apricots with the remaining 1 tablespoon granulated sugar. Sprinkle the toasted almonds over the entire tart.

4 large apricots, halved, pitted, cut into 1/4-inch slices

Steps:

  • Make crust:
  • Blend flour, sugar and salt in processor. Add butter and process, using on/off turns, until mixture resembles very coarse meal. Add yolk and process until moist clumps form. Gather dough into ball; flatten into disk. Wrap in plastic; chill 1 hour. (Can be prepared 1 day ahead. Keep chilled. Let soften slightly at room temperature before rolling out.)
  • Make filling:
  • Beat cream cheese and orange peel in medium bowl to blend. Whisk sugar, yolks, cornstarch and flour in small bowl until smooth. Bring milk to simmer in saucepan. Gradually whisk hot milk into yolk mixture; return to same pan. Whisk over low heat until custard thickens and boils. Cool custard 15 minutes. Beat barely warm custard into cream cheese mixture. Press plastic wrap directly onto surface of filling; chill until cold, at least 3 hours and up to 1 day.
  • Roll out dough on lightly floured surface to 12-inch round. Transfer to 9-inch-diameter tart pan with removable bottom. Press dough gently into place; trim excess dough. Freeze 30 minutes.
  • Preheat oven to 400°F. Line crust with foil; fill with dried beans or pie weights. Bake crust 10 minutes. Remove foil and beans. Reduce oven temperature to 375°F. Bake crust until golden, piercing with fork if bottom bubbles, about 5 minutes. Cool crust in pan on rack.
  • Spread cream cheese filling over crust. Arrange cherries, cut side down, in 2 concentric circles around edge of tart. Arrange apricots in middle of tart, overlapping slightly.
