1 tablespoon cornstarch
1/4 cup water
3/4 cup sugar
3/4 cup light corn syrup
1 teaspoon grated lemon zest

  • On a floured surface, roll half the dough to fit a 9-in. pie plate; trim to 1 in. beyond rim of plate. Set remaining dough aside. 1-1/2 cups fresh or frozen cranberries
1/4 cup packed brown sugar
1/4 cup chopped walnuts
1 large egg
1/2 cup sugar

Vanilla ice cream

  • Preheat oven to 375°. On a lightly floured surface, roll pastry dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Our family first had this pie at the Elegant Farmer in East Troy Wisconsin. It took us quite a few attempts to recreate it. I think this is pretty close. You can make your own crust, or use a prepared one. Timing based on using prepared crust.

6 cups cranberries
24 dried apricots, quartered
2 1/2 cups granulated sugar
1 1/4 cups water
2/3 cup cranberry liqueur
1 egg
2 teaspoons water
1/4 cup slivered almonds

  • Prepare or buy pie crust for 2-crust 9 1/2" deep dish pie.
