Time 48m

Yield 2 serving(s)

Number Of Ingredients 11

1 onion
2 garlic cloves
1 tablespoon oil
2 chicken breasts
1 (425 g) can apricots
2 tablespoons malt vinegar
1 teaspoon ginger, ground
1 pinch cayenne pepper
salt
black pepper, freshly ground
400 g fettuccine

Steps:

  • Peel onion and chop finely.
  • Crush, peel and chop garlic.
  • Heat oil in a saucepan and saute onion and garlic for 5 minutes or until onion is transparent.
  • Cut chicken breasts into thin strips.
  • Add chicken strips to pan and stir fry 2 or 3 minutes, or until chicken is cooked.
  • Drain apricots, leaving about 2 Tbsp of the juice.
  • Puree apricots in a food processor or blender.
  • Add malt vinegar, ginger, cayenne pepper, salt and pepper.
  • Mix to combine; pour into the saucepan.
  • Bring mixture to the boil.
  • Cook fettucine in boiling salted water for 8 to 10 minutes, or until tender.
  • Drain.
  • Serve chicken over pasta.

Tips:

  • Mise en Place: Before you start cooking, measure and prep all of your ingredients. This will help you stay organized and ensure that you have everything you need on hand.
  • Choose Ripe Apricots: The flavor of your dish will depend on the quality of your apricots. Look for ripe, juicy apricots that are free of blemishes.
  • Toast the Pine Nuts: Toasting the pine nuts in a dry skillet will bring out their nutty flavor. Just be sure to keep an eye on them so that they don't burn.
  • Use Fresh Herbs: Fresh herbs will add a burst of flavor to your dish. If you don't have fresh herbs on hand, you can use dried herbs, but be sure to use half the amount.
  • Don't Overcook the Chicken: Chicken is a delicate meat, so it's important not to overcook it. Cook the chicken until it is just cooked through, or it will become dry and tough.
  • Thicken the Sauce: If you find that your sauce is too thin, you can thicken it by adding a cornstarch slurry. To make a cornstarch slurry, whisk together 1 tablespoon of cornstarch with 1 tablespoon of water until smooth. Then, add the slurry to the sauce and cook over medium heat, stirring constantly, until the sauce has thickened.
  • Serve Immediately: Apricot chicken pasta is best served immediately, while the chicken is still hot and juicy and the sauce is still creamy.

Conclusion:

Apricot chicken pasta is a delicious and easy-to-make dish that is perfect for a weeknight dinner. The combination of sweet apricots, savory chicken, and creamy sauce is sure to please everyone at the table. With a few simple tips, you can make this dish even more flavorful and enjoyable.
