APRICOT-AND-CREAM CHEESE SQUARES

Apricot-and-Cream Cheese Squares image

A new take on an old favorite, this modern riff on the apricot-cheese Danish skips the complicated layered dough of the original for a simple focaccia dough. And rather than forming individual pastries, it's baked in a 9-by-13-inch pan and cut into squares. Another thing that makes this recipe easy on the cook, we use canned or jarred apricots rather than fresh.

Time 2h20m

Yield Makes 12

Number Of Ingredients 8

1 1/4 teaspoons active dry yeast (from 1 package)
2 tablespoons plus 1 teaspoon and a pinch sugar
6 tablespoons extra-virgin olive oil, plus more for drizzling
1 teaspoon kosher salt
2 cups unbleached all-purpose flour
4 ounces cream cheese, room temperature
1 can (15 ounces) apricot halves in heavy syrup, drained
1/4 cup honey

Steps:

  • In the bowl of a mixer fitted with the dough-hook attachment, combine yeast, 3/4 cup warm water (110 degrees), and pinch of sugar. Let stand until foamy, about 5 minutes. Increase speed to medium-high; beat until dough is soft and elastic, 3 minutes.

Stir together cream cheese and remaining 2 tablespoons sugar; dot all over dough. Arrange 12 apricot halves on top in a 3-by-4 grid formation. Drizzle with remaining 1 tablespoon oil. Cover with plastic wrap and let rise in a warm place until puffed, 30 minutes.
  • Bake until golden brown on top, 23 to 25 minutes. Let cool in pan 10 minutes, then transfer with two large spatulas to a wire rack. Drizzle with honey and oil; let cool completely. Cut into squares and serve.

APRICOT COTTAGE CHEESE BRAN BREAD

Apricot Cottage Cheese Bran Bread image

I saw a recipe calling for these three foods stacked together for breakfast.I decided this would be the perfect ingredients for a quick breakfast bread since my family would not find cottage cheese appealing for breakfast. There is plenty of energy producing nutrients in this bread or muffins. I blend the cottage cheese first so it is not lumpy.

Time 45m

Yield 12 muffins, 6-8 serving(s)

Number Of Ingredients 11

2 cups cottage cheese, blended
2 eggs
1/3 cup vegetable oil
1 cup dried apricot, diced
2 cups all-bran cereal or 2 cups Special K cereal
2 cups flour
3/4 cup brown sugar
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon vanilla
Pam cooking spray

Steps:

  • In medium bowl mix the wet ingredients together. Set aside.
  • In large mixing bowl mix the dry ingredients together.
  • Add the wet ingredients into the dry. Fold in gently.
  • Add the vanilla and fold in gently.
  • Preheat oven 375°F.
  • Spray Pam in glass baking pan or bread pan.
  • Gently pour and spread into pan.
  • You can spray Pam in muffin pans and fill 1/2 to 3/4 full.
  • Bake 30 to 35 minutes or until top springs back when pressed with a finger tip ans sides start pull away from pan.
  • Muffins have shorter baking time, when top start to turn brown and the tops springs back when pressed with a finger tip. Do not overbake muffin, they will be chewy.
  • Note: I prefer to use Special K Cereal, your choice. I have never used the Special K Cereal with the Strawberries in it but I think you could use it along with the apricots.

Tips:

  • Use fresh apricots: Fresh apricots have the best flavor and texture for this bread. If you can't find fresh apricots, you can use frozen or dried apricots, but the bread will not be as flavorful.
  • Don't overmix the batter: Overmixing the batter will make the bread tough. Mix just until the ingredients are combined.
  • Let the bread cool before slicing: The bread will be very moist when it comes out of the oven. Let it cool for at least 10 minutes before slicing, or the slices will be too crumbly.
  • Serve the bread warm or at room temperature: Apricot cheese bread is best served warm or at room temperature. You can also toast the slices and serve them with butter or cream cheese.

Conclusion:

Apricot cheese bread is a delicious and easy-to-make bread that is perfect for breakfast, lunch, or a snack. The combination of sweet apricots and creamy cheese is irresistible, and the bread is sure to be a hit with everyone who tries it. So next time you're looking for a new bread recipe to try, give apricot cheese bread a try. You won't be disappointed!
