CROCKPOT APRICOT BUTTER
There were 4 apricot trees in the front lawn of our Indiana farm home when I was growing up. Every year they produced many more apricots than we and our friends and neighbors could use. We were always looking for ways to preserve them and use them. Apricot butter became one of my favorites. Here is a simple version of that...

Cover and cook on High for 8 to 10 hours. Remove cover about half way through cooking. Stir occasionally. Store in refrigerator, can, or freeze.

IF FREEZING: Pour into sterilized cans or boxes, leaving 1/4-inch headspace and freeze. TO USE: Use in any recipe that calls for apple butter. Great on warm biscuits, fresh home made bread, and breakfast toast!
APRICOT AND RAISIN BUTTER CAKE
A moist and delicious cake. I prefer this than traditional mixed peel cakes. This is wonderful with a cup of hot tea (which I just had). Prep time includes 2 hours of soaking time for the apricots and raisins. TIPS: If you're making the whole recipe, you may use a Bundt pan. If halving the recipe, use a 8" square or round pan. If you're pressed for time, you can heat the dried fruits in brandy in the microwave on LOW, stirring every for 30 secs until warmed and fruits are soft. To chop the apricots finely, I use a kitchen shears.

Steps:
- Soak raisins and chopped apricots in brandy for 2 hours (preferably overnight in the fridge) - See TIPS above
- Prepare crumb mixture by mixing all ingredients by hand/food processor until crumbly; set aside
- Sift flour, baking powder and salt together, set aside
- Whip egg whites with 1 TB sugar until they form stiff peaks (but not dry); set aside
- Cream butter and 3/4 cup sugar until light and fluffy
- Add egg yolks, one at a time, beating well after each addition
- Next, add the soaked fruits with the brandy and stir gently
- Using LOW speed on your mixer, add the sifted flour mixture, alternating with the yogurt according to this sequence - flour-yogurt-flour-yogurt-flour, until well combined
- Now gently fold the whipped egg whites into the creamed mixture
- Pour half of the batter into greased and floured pan (bundt/square/round), followed by the crumb mixture, then finally all the remaining batter
- Bake in a preheated oven at 180°C / 350°F for 55 mins for Bundt pan, 25-30 mins for square/round pan, until a toothpick inserted into the center of the cake comes out clean
- Remove from oven, cool in the pan for 10-15mins, then cool completely on wire racks
- For a very moist cake, sprinkle brandy syrup on warm cake (I poke some holes using toothpick all over the cake before sprinkling)
- To make brandy syrup - combine 2 TB brandy, 2 TB hot water and 2 tsp sugar; stir to dissolve sugar
- The cake is best made 1 day ahead

Steps:
- Simmer apricots, water, and 1/4 cup granulated sugar in a small saucepan, stirring until sugar is dissolved and liquid is reduced by about half, 12 to 15 minutes. Remove from heat and add rum, then cool slightly. Purée in a food processor or blender until smooth (use caution when blending hot liquids).
- Whisk together flour, baking powder, and a pinch of salt in a small bowl. Beat together butter, brown sugar, and remaining 1/2 cup granulated sugar in a large bowl with an electric mixer at moderate speed until pale and fluffy, about 5 minutes. Beat in vanilla and egg. Add flour mixture and mix at low speed until just combined. Form dough into a log and chill, wrapped in plastic wrap, until firm, about 1 hour.
- Preheat oven to 350°F.
- Divide dough into 8 pieces. Put 1 piece of dough on a sheet of plastic wrap, then fold plastic wrap over dough. Form piece into an 8-inch rope (dough will be very soft). Transfer in plastic wrap to 1 of 2 ungreased baking sheets, then remove plastic wrap. Pat rope into an 8- by 1 1/2-inch rectangle. Make more ropes and pat into rectangles in same manner, arranging them about 2 inches apart. Make a shallow trough lengthwise down center of each rectangle with your finger and spread apricot pureé in trough. Bake in batches in middle of oven until edges are golden, 18 to 20 minutes, then transfer to a rack to cool completely.
- Whisk together confectioners sugar, lemon juice, and enough water (about 2 1/2 teaspoons) to make a thick but pourable icing. Drizzle icing over rectangles and cut diagonally into 1-inch-thick strips. Let stand until icing is set, about 15 minutes.
- Cooks' note:
- • Cookies keep, layered between sheets of wax or parchment paper, in an airtight container at room temperature 1 week.

Tips:
- Choose ripe apricots: Use ripe, juicy apricots for the best flavor and texture. Ripe apricots will have a deep orange color and be slightly soft to the touch.
- Use a food processor or blender: A food processor or blender will help you puree the apricots quickly and easily. If you don't have a food processor or blender, you can also use a potato masher or fork to mash the apricots.
- Add sugar to taste: The amount of sugar you add to the apricot butter will depend on your personal preference. Start with a small amount of sugar and add more to taste.
- Cook the apricot butter until it thickens: Cook the apricot butter over medium heat, stirring constantly, until it has thickened. This will take about 30 minutes.
- Store the apricot butter in a jar: Once the apricot butter has cooled, store it in a jar in the refrigerator for up to 2 weeks. You can also freeze the apricot butter for up to 6 months.
Conclusion:
Apricot butter is a delicious and versatile spread that can be enjoyed on toast, crackers, or fruit. It's also a great addition to smoothies, yogurt, or oatmeal. With its bright flavor and smooth texture, apricot butter is a surefire hit with everyone who tries it. So next time you're looking for a new and exciting way to enjoy apricots, give apricot butter a try!
