HONEY-APRICOT-GLAZED CHICKEN
This saucy slow cooker chicken lives at the flavorful intersection where sweet and savory meet. Never cooked with apricot brandy? It lends a unique fruity richness to this dish and can be found in most liquor stores shelved with flavored other liqueurs.

Steps:
- Place ingredients (DO NOT MIX) in a 1/2 gallon flat topped glass jar.
- Turn jar twice a day for 8 days (allowing jar to sit on its top for half a day).
- Batch is ready.
- You may use the same apricots, more sugar, and vodka added to make another batch, but let second batch sit for 12 to 14 days.
Tips:
- Choose ripe, juicy apricots: The flavor of the apricots will shine through in the final dish, so it's important to use the best quality fruit you can find.
- Use a good quality brandy: The brandy will add depth of flavor to the sauce, so don't skimp on it. A good Cognac or Armagnac would be a good choice.
- Don't overcrowd the pan: When searing the chicken, be sure to give it enough space so that it can brown evenly. If you overcrowd the pan, the chicken will steam instead of sear.
- Cook the chicken until it is just cooked through: Overcooked chicken will be dry and tough. To avoid this, use a meat thermometer to check that the chicken has reached an internal temperature of 165 degrees Fahrenheit.
- Let the chicken rest before serving: This will allow the juices to redistribute throughout the meat, resulting in a more tender and flavorful dish.
Conclusion:
Apricot brandy chicken is a delicious and easy-to-make dish that is perfect for a special occasion. The combination of sweet apricots, tangy brandy, and savory chicken is sure to please everyone at the table. Give this recipe a try today!
