Tips:

  • Prep your ingredients: Measure and gather all your ingredients before you start baking. This will help ensure that you have everything you need and that you don't forget anything.
  • Use fresh apricots: For the best flavor, use fresh apricots in your muffins. If you don't have fresh apricots, you can use frozen or dried apricots, but they won't have as much flavor.
  • Don't overmix the batter: Overmixing the batter will make your muffins tough. Mix the batter just until the ingredients are combined.
  • Fill the muffin cups evenly: Divide the batter evenly among the muffin cups. This will help ensure that all of the muffins are the same size and shape.
  • Bake the muffins until a toothpick inserted into the center comes out clean: This is the best way to tell if the muffins are done baking.

Conclusion:

Apricot bran muffins are a delicious and healthy way to start your day. They're packed with flavor from the apricots and bran, and they're also low in fat and calories. These muffins are perfect for a quick breakfast or snack, and they're also a great way to use up any leftover apricots.
