½ cup butter, softened
¼ cup white sugar
1 cup all-purpose flour
⅔ cup dried apricots
1 cup water
2 eggs
1 cup packed light brown sugar
⅓ cup all-purpose flour
½ teaspoon baking powder
¼ teaspoon salt
1 teaspoon vanilla extract
1 teaspoon lemon juice
1 cup chopped walnuts
¾ cup flaked coconut
⅓ cup confectioners' sugar for decoration

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). In a medium bowl, mix together butter, sugar, and 1 cup flour. Press into the bottom of an ungreased 9x13 inch pan.

Steps:

1 (250 g) packet plain cookies
1 cup dried apricot, finely chopped
1 1/2 cups finely shredded coconut (desiccated)
1 (395 g) can sweetened condensed milk
125 g butter
1 1/4 cups milk chocolate chips

Steps:

  • Line base of a 18cm x 28cm pan with baking paper.
  • Put the cookies in a food processor or blender and grind to crumbs.
  • Combine the crumbs with the chopped apricots and coconut in a bowl.
  • Pour the condensed milk into a medium saucepan and add the butter.

1 1/3 cups flour
1/2 teaspoon baking powder

15 ounces condensed milk
1/2 cup flaked coconut

  • Preheat oven to 350 degrees.
