APRICOT CHERRY CRISP

Apricot Cherry Crisp image

Modified from a recipe in a Pike Place Market Basket newsletter. Apricots and cherries have been fabulous in Washington this summer and this recipe is quick, easy and very yummy. Like all crisps and cobblers, this is very flexible. Blackberries or blueberries can be substituted for cherries, and peaches can be substituted for apricots (I add some cornstarch when using peaches as they generate more juices than apricots).

Tips:

  • To achieve the best texture for your crisp, use a combination of soft and firm apricots. Soft apricots will provide a jammy filling, while firm apricots will hold their shape and provide a bit of bite.
  • If you don't have fresh cherries, you can use frozen cherries that have been thawed and drained. Just be sure to pat them dry before adding them to the crisp.
  • For a sweeter crisp, use a combination of white and brown sugar. The brown sugar will add a richer flavor and a slightly chewy texture.
  • If you want a crispier topping, use a combination of oats and flour. The oats will add a hearty texture, while the flour will help to bind the topping together.
  • Be sure to preheat your oven before baking the crisp. This will help to ensure that the topping is crispy and the fruit is cooked through.

Conclusion:

Apricot and cherry crisp is a delicious and easy-to-make dessert that is perfect for any occasion. It is a great way to use up fresh apricots and cherries, and it can be served with a variety of toppings, such as ice cream, whipped cream, or yogurt.
