3/4 cup butter, softened
1 cup packed brown sugar
1 large egg
1 teaspoon vanilla extract
1-2/3 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 package (10 to 12 ounces) vanilla or white chips
3/4 cup chopped almonds
3/4 cup chopped dried apricots

Steps:

  • In a large bowl, cream butter and brown sugar until light and fluffy. Beat in egg and vanilla. Combine the flour, baking soda and salt; gradually add to the creamed mixture and mix well. 25 grams (1/4 cup) desiccated coconut, plus extra for rolling
1 tablespoon coconut oil

Steps:

  • To a food processor, add apricots, dates, almond meal, coconut and coconut oil. Mix on high for 1 minute or until mixture is finely processed - it's ok if it's a little bit chunky.
  • Roll tablespoons of apricot mix into small balls, using your hands, until smooth. Dip each ball in extra coconut and place on a plate. Repeat with remaining apricot mixture.
  • Place balls in the fridge for at least 30 minutes to set. Store balls in fridge.
