2 cups all-purpose flour
1 1/2 tsp baking soda
1 1/4 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp allspice
3/4 cup white sugar
1 large egg, beaten
1 tsp vanilla extract
1/2 tsp salt
2 cups zucchini, grated
1/3 cup + 2 tbsp vegetable oil
1/3 cup + 2 tbsp applesauce
1/2 cup chocolate chips (optional)

Steps:

  • Preheat oven to 350˚F. Grease a 9X5 loaf pan and set aside.
  • In a large mixing bowl, combine flour, baking soda, cinnamon, nutmeg, and all spice.
  • In another mixing bowl, whisk together sugar, egg, vanilla extract and salt. Stir in zucchini, applesauce, and vegetable oil.
  • Add the wet mixture to the dry ingredients and stir until just combined. If using the chocolate chips, stir them in here.
  • Pour the batter into the prepared loaf pan.

1 ¾ cups white sugar
1 cup vegetable oil

1 cup applesauce
3 teaspoons vanilla extract
1 cup chopped pecans

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease two loaf pans.

1/2 cup plain applesauce
1 1/2 cups sugar
2 cups freshly grated zucchini
2 teaspoons pure vanilla extract

Steps:

  • Preheat oven to 350. Grease one 9 x 5 inch loaf pans. OR, one 12-cup muffin tin.
  • Sift together flour, baking soda, baking powder, salt and cinnamon into a bowl.
