1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1 teaspoon ground cardamom

½ cup brewed black coffee, at room temperature
3 tablespoons instant espresso powder
1 cup plain whole-milk Greek yogurt
¾ cup unsweetened applesauce
¾ cup pure maple syrup
2 large eggs, at room temperature
1 ½ teaspoons vanilla extract
1 cup dark chocolate chips
¾ cup chopped walnuts
1 tablespoon powdered sugar, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9-inch springform pan.

1/4 cup butter, at room temperature
1 egg
1/2 cup plain yogurt
2 cups applesauce
1 teaspoon grated orange rind
1 teaspoon vanilla
1 1/2 cups all-purpose flour
1 1/4 cups whole wheat flour
3 tablespoons natural bran
2 teaspoons cinnamon
2 teaspoons baking soda
1 cup raisins

Steps:

  • Butter and flour a 10 inch bundt pan or tube pan.
  • In mixing bowl, combine sugar and butter, beat until mixed.
  • Add egg and beat until light in colour.
  • Add yogurt and beat until mixed.
  • Beat in applesauce, orange rind and vanilla.
  • In another bowl, combine flours, bran, cinnamon, baking soda and raisins, stir to mix Pour dry ingredients over applesauce mixture and stir just until combined.
  • Pour into prepared pan and bake in 325 degrees oven for 70 or 80 minutes or until toothpick inserted in centre comes out clean.
  • Remove from oven.
  • Let cool on rack for 20 minutes, then remove from pan and place on wire rack to finish cooling.

2 teaspoons baking soda
1 teaspoon salt

1 cup (2 sticks) unsalted butter, room temperature
2 cups packed light-brown sugar
1/4 cup honey
2 large eggs
2 cups Basic Applesauce, or store-bought chunky applesauce
Nonstick cooking spray
Confectioners' sugar, for dusting (optional)

Steps:

  • Preheat oven to 350 degrees. In a large bowl, whisk together flour, baking soda, salt, cinnamon, and cardamom. Set aside.
  • In another bowl, with an electric mixer, beat butter, brown sugar, and honey until light and fluffy. Add eggs, one at a time, beating until combined. With mixer on low speed, gradually add flour mixture; beat just until combined. Beat in applesauce.

½ teaspoon Baking Soda
¼ teaspoon Salt
1 teaspoon Baking Powder
½ teaspoon Ground Cinnamon
¼ teaspoon Ground Cloves
½ cup or 106.5 grams Brown Sugar
¼ cup or 56 grams Unsalted Butter
1 Large Egg
½ cup Unsweetened Applesauce
¼ cup or 42.5 grams Raisins or Currants
¼ cup or 28.5 grams chopped Walnuts

Steps:

  • Preheat the oven to 350 F.
  • Lightly grease a 6" cake pan. Use a 9" cake pan for double the recipe.
  • In a medium sized bowl mix or whisk together all the dry ingredients; wheat flour, baking soda, salt, baking powder, cinnamon and cloves until well blended.
  • In a large bowl, cream together sugar and butter.
  • Add the eggs and beat well.
  • Fold in dry ingredients alternating with applesauce. Fold or mix until just combined and do not over beat.
  • Stir in raisins and walnuts until just mixed.
  • Pour the batter into a prepared pan and bake until a cake tester inserted in the center comes out clean, 40 - 50 minutes. It took 37-38 minutes in my oven. In mini loaf pans bake time was 35 minutes.
  • Let the cake cool for 10 minutes in the pan, turn the cake onto a cooling rack and let cool completely.
  • Dust the top of the cake with powdered sugar and serve. If you are like me, eat it as is.
  • Store the cake in a covered container at room temperature for 3 days or freeze it upto 3 months.
