WEIGHT WATCHER'S APPLESAUCE SPICE MUFFINS (POINTS PLUS-2 PTS)

Weight Watcher's Applesauce Spice Muffins (Points Plus-2 Pts) image

This recipe is a variation of the 1 pt Banana Bread recipe, which ends up being 2 pts with the new points system. I jazzed it up with spices and used applesauce, though just like the other recipe you can vary the ingredients.

Time 30m

Yield 12 muffins, 12 serving(s)

Number Of Ingredients 9

1/2 cup whole wheat flour (I used whole wheat pastry flour)
3/4 cup all-purpose flour
1 cup Splenda sugar substitute
1 teaspoon sea salt (regular salt is also fine)
1 1/2 teaspoons baking soda
1 teaspoon pumpkin pie spice
1 teaspoon cinnamon (optional -- I really like cinnamon)
2 cups unsweetened applesauce
nonstick cooking spray

Steps:

  • Preheat Oven 350 degrees.
  • Spray muffin tins with nonstick spray.
  • Mix all dry ingredients to equally distribute.
  • Add applesauce.
  • Don't let rest, put into muffin tin 3/4 full.
  • Bake 20-22 minutes.

Tips:

  • Choose the right apples. Use a variety that is tart and flavorful, such as Granny Smith or Honeycrisp. These apples will hold their shape better when baked and will give the muffins a delicious flavor.
  • Don't overmix the batter. Overmixing can make the muffins tough. Mix the batter just until the ingredients are combined.
  • Use fresh spices. Freshly ground spices will give the muffins the best flavor. If you don't have fresh spices, you can use store-bought spices, but be sure to use half the amount called for in the recipe.
  • Don't overbake the muffins. Overbaked muffins will be dry and crumbly. Bake the muffins until a toothpick inserted into the center comes out clean.
  • Let the muffins cool before serving. This will allow the flavors to develop and the muffins to set.

Conclusion:

These applesauce spice muffins are a delicious and easy-to-make treat that is perfect for breakfast or a snack. They are moist and flavorful, with a hint of sweetness from the applesauce and spices. These muffins are also a good source of fiber and vitamins. So next time you're looking for a quick and easy breakfast or snack, give these applesauce spice muffins a try!
