I found this recipe on a Duncan Hines spice cake mix box. It was easy to make. It was not too sweet, but sweet enough! I used chunky applesauce & I did not frost the cake -- I just sprinkled it with cinnamon sugar, but the frosting sounds good too.

1 c unsweetened applesauce
1 tsp vanilla
confectioners sugar for serving

VEGAN APPLESAUCE SPICE CAKE

VEGAN APPLESAUCE SPICE CAKE image

Categories     Cake     Apple

Number Of Ingredients 12

2 packed cups (10 ounces) unbleached all-purpose flour
1 cup sugar
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon allspice
1/4 teaspoon mace
1/8 teaspoon cloves
1 cup raisins OR 3/4 cup raisins and 3/4 cup chopped walnuts
1 1/2 cups unsweetened applesauce (I use Santa Cruz Organic)
1/2 cup organic canola oil
2 teaspoons vanilla, optional

Steps:

  • 1 Preheat oven to 350 degrees. Grease well and lightly flour one 10-inch round pan (or one 9-inch, not 8-inch, square pan). 2 In large mixing bowl, whisk together flour, sugar, soda, salt and spices. Stir in the raisins and walnuts, separating the raisins. Add the applesauce, oil, and vanilla. Blend well. No electric mixer needed. 3 Pour into prepared pan. Bake at 350 degrees for about 35 minutes or until it tests done. 4 Cool in pan on wire rack for 10 minutes. Remove from pan and cool on rack for an hour.

Tips:

  • Use fresh apples. Fresh apples will give your applesauce spice cake the best flavor and texture. If you don't have fresh apples, you can use unsweetened applesauce, but the flavor will not be as good.
  • Peel and core the apples before cooking them. This will help to remove any unwanted bitterness from the apples.
  • Cook the apples until they are very soft. This will make them easier to mash and will help to release their natural sweetness.
  • Use a combination of spices. The spices in this recipe will give your cake a warm and inviting flavor. You can adjust the amount of each spice to suit your own taste.
  • Don't overmix the batter. Overmixing the batter can make the cake tough. Mix just until the ingredients are combined.
  • Bake the cake until a toothpick inserted into the center comes out clean. This will ensure that the cake is cooked through.

Conclusion:

Applesauce spice cake is a delicious and easy-to-make cake that is perfect for any occasion. It is moist, flavorful, and has a wonderful aroma. This cake is also a good source of fiber and vitamin C. So next time you are looking for a delicious and healthy cake to make, give applesauce spice cake a try. You won't be disappointed!
