NO-FAT BANANA APPLESAUCE MUFFINS

No-Fat Banana Applesauce Muffins image

I got this recipe out of a Gooseberry Patch cookbook and it is one of my stand-by recipes when I am watching my calories and fat. Since I am doing just that right now, thought I would put it on the zaar for easy access and hopefully someone else likes this recipe as good as I do. (I prefer to sub 3/4 of the white flour for whole wheat and use brown sugar instead of granulated sugar. I think fresh nutmeg is the key in this!)

APPLESAUCE RAISIN BRAN MUFFINS

Applesauce Raisin Bran Muffins image

I checked and while I found many bran muffin recipes here, none were quite like this. I like this one not only because it is lower fat, but because it doesn't have as much added sugar, and it relies on the cereal more than the flour to make the batter. The muffins themselves are surprisingly moist and light in texture. I like the light sweetness of these and the crunchy muffin tops. (If you sprinkle a little extra cereal on top, they get an even better crunch, and improved appearance.) I found this recipe at www.mealsmatter.org. Watch these since the recipe stated they should bake in 20 minutes, but I found mine were done after about 15.

BLUEBERRY OATMEAL APPLESAUCE MUFFINS

Blueberry Oatmeal Applesauce Muffins image

These muffins are not only delicious, but very low in fat and heart-healthy. The oats and flaxseed meal add fiber and whole grains for a filling and delicious breakfast or snack, while the applesauce takes the place of egg, butter, or cream that you might find in other muffin recipes. You can make this recipe vegan by omitting the egg and using soymilk as a substitute for milk (I use Lactaid milk to make it dairy-free). To make it sugar-free, substituting Splenda for the small amount of sugar is just as good! A pecan half on top of the muffin adds a visually-appetizing touch while adding a slight crunch to a moist and filling muffin!

Yield 12 Muffins, 12 serving(s)

Number Of Ingredients 14

1 1/2 cups oats (quick or old-fashioned)
1 1/4 cups flour
3/4 teaspoon cinnamon
1 teaspoon baking powder
3/4 teaspoon baking soda
1 cup unsweetened applesauce
1/2 cup skim milk
1/2 cup firmly packed brown sugar
3 tablespoons vegetable oil
1 egg white
1/4 cup oats (quick or old-fashioned)
1 tablespoon firmly packed brown sugar
1/8 teaspoon cinnamon
1 tablespoon margarine, melted

Steps:

  • Heat oven to 400.
  • Line 12 medium muffin tins with paper cups(optional)(spray muffin tin with cooking spray w/o paper cups).
  • Combine oats, flour, cinnamon, baking powder and baking soda.
  • Add applesauce, milk, brown sugar, oil and egg white.
  • Mix just until dry ingredients are moistened.
  • Fill muffin cups almost full.
  • For topping combine remaining ingredients. Sprinkle evenly over batter.
  • Bake 20-22 minutes until deep golden brown.
  • Serve Warm.

Tips:

  • Use ripe apples: This will give your muffins a sweeter flavor and a more tender texture.
  • Peel and core the apples before grating them: This will help to prevent the muffins from becoming too dense.
  • Grate the apples using a large-holed grater: This will create small pieces of apple that will distribute evenly throughout the muffins.
  • Add some spices to the batter: This will give your muffins a warm and inviting flavor. Common spices used in applesauce muffins include cinnamon, nutmeg, and ginger.
  • Don't overmix the batter: Overmixing can make your muffins tough. Stir the batter just until the ingredients are combined.
  • Bake the muffins at a high temperature: This will help them to rise and create a tender crumb.
  • Let the muffins cool completely before frosting them: This will help to prevent the frosting from melting.

Conclusion:

Applesauce muffins are a delicious and easy-to-make treat that can be enjoyed by people of all ages. They are a great way to use up leftover applesauce, and they are also a healthier alternative to other muffin recipes. With a few simple tips, you can make applesauce muffins that are light, fluffy, and full of flavor.
