- In a bowl, combine the first six ingredients; add 1 cup flour. Stir to coat. In a bowl, cream butter and sugar; add eggs and mix well. Add the applesauce and vanilla extract. Combine the baking soda, cinnamon, salt, nutmeg, cloves, allspice and remaining flour; stir into applesauce mixture. Stir in fruit mixture. Pour into a greased and floured 10-in. tube pan. , Bake at 325° for 60-65 minutes or until a toothpick inserted in the center comes out clean. - Preheat oven to 325 degrees F (160 degrees C). Grease a 10 inch tube pan. Line bottom with parchment paper and grease again.
- In large bowl, cream sugar and shortening until light and fluffy. Add eggs and blend well.
- Lightly spoon flour into measuring cup; level off. Combine 1/2 cup of flour with nuts, raisins, dates and 1/2 cup cherries, stir until coated. Set aside.
- Add remaining 2 3/4 cups flour, baking soda, cinnamon, allspice, cloves and salt to egg mixture. Blend at low speed until moistened, then beat 2 minutes on medium speed.
- Fold fruit and nut mixture and applesauce into batter. Pour batter into a 10 inch tube pan. Arrange cherry halves and pecans on top.
- Bake at 325 degrees F (160 degrees C) for 1hour and 15 to 45 minutes, or until toothpick inserted in center comes clean. Cool upright in pan 5 minutes. Turn upright onto wire rack and remove pan and parchment paper. Cool completely.

- 1. Preheat oven to 250 degrees. In medium saucepan combine applesauce, shortening and sugar. Boil for 5 minutes, stirring occasionally. Remove from heat and cool.
- 2. Meanwhile, stir together dates, raisins, nuts, cherries and pineapple in a large bowl. Add the cooked mixture to the fruit and nuts. Then add dry ingredients and mix well.
- 3. Prepare pan of your choice (tube pan, loaf pans) by greasing well and line bottom with waxed paper which you then also grease. Fill prepared pan 2/3 full. Bake at 250 for 2 hours or until cake tests done.
- 4. Cool completely. Remove from pan(s) and remove waxed paper. Wrap in foil and store in refrigerator or cool place.

- 1. Mix in order. I mix by hand as it is hard to mix. But do it in order so that fruit and raisins will be coated with dry ingreidents.
- 2. Pour into pans but grease and flour them. You can use a bundt pan also. When giving as gifts, I use small loaf pans. (Mini) and give 1 per person.
- 3. Heat oven to 350 degrees. Bake 1 hour and 10 mins. Toothpick test should be slightly damp. Otherwise cake is dry.
- 4. Remove from pans. Cool. May brush with same as you used above, (bourbon, brandy, spiced rum, or plain rum.) lightly on all sides with a small paint brush or pastry brush. Store wrapped in plastic wrap and then heavy foil.
- 5. When serving, stir topping ingredients together and drissel on top. If giving as gifts, Mix topping and put enough in a snack zip lock baggie. Scotch tape to ribbon on top and put on card to snip 1 corner of baggie and drissel over cake. May also add the receipe.
