3/4 cup sugar
2 large eggs. room temperature
1 teaspoon vanilla extract
1-1/3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/8 teaspoon ground cloves
3/4 cup applesauce
1 cup prepared cream cheese frosting

Steps:

  • In a large bowl, cream butter and sugar. Add eggs, 1 at a time, beating well after each addition. Beat in vanilla. Combine dry ingredients; add to creamed mixture alternately with applesauce., Fill greased or paper-lined muffin cups two-thirds full. 10-15 large apples, peeled, cored and cut into chunks
1/2 c granulate sugar
3 Tbsp rum or 1 tablespoon vanilla
zest of 1 large lemon, finely grated
2 Tbsp unflavored gelatin
1/4 c water

Steps:

  • 1. Place the apples in a 3 quart saucepan and add 2 cup water and cook until very soft. Remover from heat. Mash apples down and add sugar, rum and lemon zest. Return to low heat and cook until mixture mounds when dropped from a spoon.
  • 2. Soften gelatin in the 1/4 c. water and dissolve over hot water. When dissolved stir it into the applesauce. Let applesauce set to cool. This mixture will thicken quickly in the refrigerator. Now it is ready to use in your favorite recipe.

1 cup finely chopped pecans
3/4 cup powdered sugar
5 teaspoons apple juice, about

Steps:

  • Whisk together flour, baking soda, cinnamon, nutmeg, cloves and salt until very well combined; set aside.
  • In a mixer, beat butter and sugar until creamy; add egg and beat until fluffy.

2 cups flour, sifted
1 teaspoon baking soda
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon salt
1/3 cup shortening
3/4 cup honey
1 cup unsweetened applesauce
1 cup seedless raisin
1/4 cup broken walnut pieces
your favourite frosting

Steps:

  • Preheat the oven to 350. Line the cupcake pans with paper liners.
  • Put the sifter into the medium mixing bowl. Measure the sifted flour, baking soda, nutmeg, cinnamon, cloves, and salt into the sifter. Sift these dry ingredients into the bowl.
  • Measure the shortening into the large mixing bowl. Use the electric mixer to beat the shortening until it is fluffy.
  • Add the honey to the shortening and continue to beat the mixture for 2 minutes. Stop the mixer once or twice and use the rubber spatula to scrape down the sides of the bowl.
  • Add half the applesauce and half the sifted dry ingredients to the honey-and-shortening mixture. Mix at medium speed until all the flour disappears. Stop once or twice to scrape down the sides of the bowl with the spatula.

  • Use the wooden spoon to stir in the raisins and walnut pieces.
