Steps:
- Combine the apples, sugar, 1 cup water and 1/2 teaspoon salt in a large pot. Bring to a simmer over medium-high heat, stirring occasionally. Reduce the heat to medium-low. Cover with a tight-fitting lid and cook until the apples are very soft, 18 to 20 minutes.
- Stir in the lemon juice and cinnamon. Let cool for 5 minutes or so, then transfer the apple mixture to a blender, filling no more than halfway. Remove the center cap from the lid and place it on the blender. Cover the lid with a folded kitchen towel to catch splatters and pulse until smooth. Alternatively, puree in the pan with an immersion blender.
- Transfer the applesauce to a bowl and refrigerate until cool, about 1 hour. Store leftover applesauce in an airtight container in the refrigerator for up to 5 days.

Tips:
- Choose the right apples: Granny Smith apples are a good choice for applesauce cheddar fruitcake because they hold their shape well and have a tart flavor that complements the cheddar cheese.
- Use fresh cheddar cheese: Fresh cheddar cheese will give your fruitcake the best flavor. Avoid using pre-shredded cheese, as it often contains additives that can affect the taste and texture of the cake.
- Don't overmix the batter: Overmixing the batter can make the cake tough. Mix the ingredients just until they are combined.
- Bake the cake in a water bath: Baking the cake in a water bath helps to keep it moist and prevents it from drying out.
- Let the cake cool completely before serving: This will allow the flavors to develop and the cake to set.
Conclusion:
Applesauce cheddar fruitcake is a delicious and unique holiday treat. It's perfect for gift-giving or enjoying with family and friends. With its moist texture, sweet and tangy flavor, and festive appearance, this cake is sure to be a hit at any gathering.
