CARAMEL FROSTING APPLESAUCE CAKE

Caramel Frosting Applesauce Cake image

This cake is equally as good for desert and breakfast.....I love it as a coffee cake! It is a bit sweet, but heh....you only live once, right!? Start the frosting just before the cake comes out of the oven, because it has to cool before adding the sugar.

Time 2h45m

Yield 8 serving(s)

Number Of Ingredients 11

1 1/2 cups all-purpose flour
1 1/2 teaspoons pumpkin pie spice
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
5 tablespoons unsalted butter, softened
1/2 cup light-brown sugar
1 egg
1/4 cup buttermilk
1 cup unsweetened applesauce
bottled caramel sauce, whipped topping and pecans (optional)

Steps:

  • Coat slow cooker bowl with nonstick cooking spray. Place 1 long sheet of nonstick foil in bottom of slow cooker bowl, with ends hanging over handles.
  • Whisk together flour, pumpkin pie spice, baking soda, baking powder and salt; set aside.
  • Beat together butter and brown sugar on high speed for 1 minute. Beat in egg. Scrape down sides of bowl and, on low speed, beat in buttermilk (mixture will look curdled). Beat in applesauce. Add flour mixture to bowl and beat on low speed until combined.
  • Spread batter into slow cooker. Place a clean dish towel over slow cooker then put cover on top. Cook on HIGH for 2-1/4 to 2-1/2 hours or until toothpick inserted in center comes out clean. Use foil handles to lift cake out of slow cooker. Cut into slices. Garnish with caramel sauce, whipped topping and pecans, if desired.

Tips:

  • Use a variety of apples for a more complex flavor. This recipe calls for Granny Smith apples, but you can also use other varieties such as Honeycrisp, Pink Lady, or Braeburn.
  • Be sure to peel and core the apples before cooking them. This will help to remove any unwanted bitterness from the applesauce.
  • Cook the applesauce until it is thick and smooth. This will help to ensure that the cake has a moist and tender crumb.
  • Don't overmix the batter. Overmixing can result in a tough, dry cake.
  • Bake the cake until a toothpick inserted into the center comes out clean. This will help to ensure that the cake is cooked through.
  • Let the cake cool completely before frosting it. This will help to prevent the frosting from melting.

Conclusion:

This applesauce cake with caramel sauce is a delicious and easy-to-make dessert that is perfect for any occasion. The cake is moist and tender, with a sweet and tangy flavor. The caramel sauce is rich and creamy, and it perfectly complements the cake. This recipe is sure to be a hit with everyone who tries it.
