2 1/2 cups all-purpose flour
2 tablespoons ground cinnamon
1 tablespoon baking powder
1/4 teaspoon salt
1 egg
1 cup applesauce
1 cup brown sugar
2/3 cup milk
2 tablespoons oil
1 cup walnuts (chopped and divided (could use pecans))
1/2 cup raisins

Steps:

  • Beat egg, applesauce, brown sugar, milk and oil together in bowl. Add flour, cinnamon, baking powder, salt and mix until all ingredients are wet. Fold in half the walnuts and the raisins.
  • Pour into a 9 x 5 loaf pan that has been sprayed with cooking spray. Sprinkle the rest of the walnuts on top of the batter. Bake in preheated 350 degree oven for 55 to 60 minutes.
  • Cool in pan at least 10 minutes.

1/3 cup butter, softened
1 cup sugar
1 egg
1-1/4 cups applesauce
1-1/2 cups all-purpose flour
3/4 teaspoon baking soda

2 packages (1/4 ounce each) active dry yeast
1-1/2 cups warm water (110° to 115°), divided
1 teaspoon sugar
3 large eggs, room temperature, beaten
1 cup applesauce
1/2 cup honey
1/2 cup canola oil
2 teaspoons salt
8 to 9 cups all-purpose flour
1-1/2 cups diced peeled apples
1-1/2 cups raisins
2 tablespoons lemon juice
2 tablespoons cornmeal
GLAZE:
1 large egg, beaten

Steps:

  • In a small bowl, combine yeast, 1/2 cup water and sugar; set aside. In a large bowl, combine eggs, applesauce, honey, oil, salt and remaining water; mix well. Stir in yeast mixture.
