16 cups 1-inch bread cubes, white or whole wheat (2 baguettes)
4 tablespoons unsalted butter (1/2 stick)
2 cups medium-diced yellow onion (2 large)
2 cups medium-diced celery (3 large stalks)
2 Granny Smith apples, unpeeled, cored and large diced
2 tablespoons chopped flat-leaf parsley
1 1/2 teaspoons minced fresh rosemary leaves
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1 cup chicken stock
1/2 cup sliced blanched almonds, toasted, optional

Steps:

  • Preheat oven to 300 degrees F.
  • Put the bread cubes on a 13 by 18 by 1-inch baking sheet and bake them in the oven for 7 minutes.
  • In a large saute pan, melt the butter and add the onion, celery, apples, parsley, rosemary, salt, and pepper. Saute for 10 minutes, until the mixture is soft.
  • Combine the bread cubes and cooked vegetables in a large bowl and add the chicken stock, and almonds, if desired.
  • Place the stuffing into the main cavity of the turkey and into the neck of the bird. I cook a 12-pound turkey for 2 1/2 hours at 350 degrees F in a preheated oven. Make sure the stuffing in the cavity is secured by wrapping the legs tightly with string.

salt (to taste)
1 large zucchini
5 -6 apples
1 red onion
2 eggs
4 cups Italian seasoned breadcrumbs
4 -8 tablespoons sage
1 -2 tablespoon thyme
1/4 cup almonds, pieces (optional)
1/4 cup walnuts, pieces (optional)
1/4 cup sunflower seeds (optional)

Steps:

  • Grate up zucchini, dice onion, peel, core, and chop up apples. In a frying pan head up oil on medium/medium low head. Mix zucchini, onion, and apple, put in fry pan, salt to taste. Steam veggies in the oil, about 10 minutes until all are soft.
  • In large bowl mix breadcrumbs, sage and thyme. (optional: add sunflower seeds, walnuts, and almonds). In separate bowl beat eggs until well mixed.
  • Add zucchini mixture to breadcrumbs. Mix well. Pour eggs over, mix well.
  • Stuffing is ready to go into the turkey, or whatever else you'd like to put it into.

2 pounds zucchini, sliced crosswise 1/3-inch thick
1 onion, diced
1 (10.75 ounce) can cream of chicken soup
8 ounces sour cream
salt and ground black pepper to taste
1 (6 ounce) package corn bread stuffing mix (such as Kraft® Stove Top®)
¼ cup butter, melted
1 cup grated Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring 1/2 cup of lightly salted water to a boil. Add zucchini and onion and cook uncovered until crisp-tender, about 5 minutes. Drain in a colander and transfer to a bowl.
  • Stir soup and sour cream into zucchini and onions. Season with salt and pepper.
  • Combine stuffing mix with butter in a small bowl; stir well.
  • Layer half of the stuffing mix into the bottom of a 9x13-inch baking dish. Spoon the zucchini mixture on top. Sprinkle with half of the Cheddar cheese. Add the rest of the stuffing mix, then the remaining cheese. Cover baking dish with aluminum foil.

3 Tablespoons butter (melted)
salt and pepper to taste

Steps:

  • Preheat oven to 375°F. Spray a 8"x11" or two quart baking dish with cooking spray.
  • Cook onion in butter on medium heat until translucent, about 5 minutes. Add zucchini and cook for 4-5 more minutes to remove some water.
  • In a medium bowl, combine ½ of the stuffing mix, ½ of the cheddar cheese, eggs, milk, butter, and the zucchini mixture. Add just enough water for the stuffing mixture to be moist. Spread into baking dish.

2 carrots, peeled and shredded
6 tablespoons butter , divided
1/2 cup chopped onion
2 1/2 cups herb-seasoned stuffing cubes, divided
1 (10 3/4-ounce) can cream of chicken soup
1/2 cup sour cream​

Steps:

  • Gather the ingredients.
  • Preheat oven to 350 F. Butter a 1 1/2-quart casserole dish.
  • Put zucchini rounds into a medium saucepan and cover with water. Add about 1 teaspoon of salt and bring to a boil over high heat. Cover pan and lower heat to medium-low. Cook for about 3 to 4 minutes, or until tender.
  • Drain zucchini well and set aside.

1/4 cup minced onion
1/2 cup breadcrumbs, fine (your own or seasoned boxed)
1/4 cup parmesan cheese, grated (can sub Romano or blend)
3 teaspoons garlic, chopped (roasted or not)
oregano
pepper
oil, enough to coat (preferably olive)

Steps:

  • Take a casserole dish (I use 4 quart but can be any shape or size).
  • Dice zucchini add to dish toss in onion, bread crumbs, grated cheese, garlic, oregano and pepper and mix well pour in oil and coat just to moisten crumbs-- not so it is sitting in oil.
