A nice variation on turkey meatloaf. Don't remember where I got the recipe but know it's a crowd pleaser for anyone who likes curry flavor. We like a hot curry blend, but others may want to start with something less spicy and work up.

2 medium size granny smith apples, chopped
2 tablespoons butter or 2 tablespoons margarine
1 medium onion, chopped
5 teaspoons curry powder
1 tablespoon ground coriander
1/4 cup minced parsley
2 lbs ground turkey
1 large egg
3/4 cup fine dry breadcrumb
1/2 cup milk
salt and pepper
chutney

Steps:

  • Saute onion and apple until limp; add curry powder, coriander, and parsley; continue cooking for two more minutes.
  • Thoroughly mix onion-apple mixture with remaining ingredients in a large bowl. Pan-fry a small sample to check seasoning. Add salt, pepper, and curry to taste.
  • Pat into a 9x5 loaf pan or 8" square pan; bake one hour at 350 degrees. Test by cutting to be sure that loaf is not pink in center.
  • Turn out onto a platter and garnish with apple wedges and chutney to taste.

1 tablespoon margarine
2 tart apples, such as Granny Smith, peeled, cored and chopped
1 medium onion, chopped
1 1/2 lbs turkey breast, skinned and ground
1 1/2 teaspoons dried marjoram
1 teaspoon dried thyme
1 teaspoon sage
1 teaspoon black pepper
1/2 cup parsley, chopped
2 egg whites
1/2 cup dry breadcrumbs
1/2 cup nonfat milk

Steps:

  • Preheat oven to 350 degrees.
  • Melt margarine in 12 inch skiller over medium heat. Add apples and onion. Cook until onion is soft, about 10 minutes.
  • Let cool, scrape into a large bowl and mix in turkey and all the spices, parsley, egg whites, bread crumbs and milk. Pat into a 9x5 loaf pan. Bake til brown on top and no longer pink, about 1 hour.
  • Drain fat from loaf pan, invert pan and turn loaf onto a platter.

1 lb ground turkey
1 eggs or 2 egg yolks, beaten
1/2 cup carrot, pureed (baby food works well)
1/4 cup applesauce
1/4 cup wheat bran (unprocessed and natural) or 1/4 cup oat bran (unprocessed and natural)
1/4 cup breadcrumbs
1 pinch basil
1 pinch garlic powder

Steps:

  • Place ground turkey in a large mixing bowl.
  • Add the egg/yolk, carrots, applesauce, spices, bread crumbs and bran.
  • Mix well - If this mixture appears too dry, add more carrots or applesauce. If this mixture appears too wet, add more bran and/or bread crumbs.
  • Place mix into a lightly oiled (olive oil) loaf pan and bake at 350F for approximately 45 minutes or until an inserted knife comes out clean.
  • **You may wish to cover with foil to prevent the top from burning.
  • When finished baking and cooled, remove loaf from pan and slice as you would for bread.
  • Break into small bits for finger feeding or mash or chop gently for younger babies.
