1/2 teaspoon ground allspice
1/4 teaspoon turmeric

2 tablespoons plus 2 teaspoons extra-virgin olive oil
2 Gala apples, cut into wedges
1 red onion, sliced
Juice of 1 lemon
1/2 cup low-sodium chicken broth
2 cloves garlic, minced
1 bunch Swiss chard, chopped (stems and leaves separated)

Steps:

  • Season the chicken with the allspice, turmeric, 1/2 teaspoon salt and a few grinds of pepper. Heat 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add the chicken and cook until browned, 3 to 4 minutes per side. Transfer to a plate; set aside.

My mother, who does not eat chicken, loves the topping of this dish.

8 skinless, boneless chicken breasts
1 (10.75 ounce) can condensed cream of chicken soup
⅓ cup water
8 slices Swiss cheese
2 cups Italian seasoned bread crumbs
½ cup butter
