Steps:
- Preheat the oven to 350 degrees F.
- In a large bowl, toss the sweet potatoes generously with some olive oil, salt, cinnamon and cayenne. Lay the sweet potatoes out on a sheet tray, place them in the oven and roast until they are very soft and mushy, 30 to 35 minutes.
- Peel the apples and cut into 1-inch dice. Toss the apples with the lemon juice, some olive oil, salt and the rosemary. Lay them out on a sheet tray and place in the oven during the last 15 minutes of the cooking time for the sweet potatoes. When done, the apples should be soft and cooked through but still hold their shape. Sprinkle the walnuts over the apples during the last 5 minutes in the oven.
- Transfer the sweet potatoes to a large bowl and coarsely mash them with a potato masher. Stir in the cooked apples and walnuts. Taste and adjust the seasoning if needed.
- Serve immediately or keep in a warm oven and serve hot.
APPLE SWEET POTATO SCALLOP
This is the perfect side dish on a chilly Autumn evening. The apples give it just the right amount of sweetness, and it smells heavenly cooking. I actually cooked this in a smaller oval casserole dish and used 2 sweet potatoes and 3 apples, so obviously the amounts are very flexible. Just reduce the other ingredients and make sure you use enough OJ so that it covers about 2/3 of the sweet potatoes and apples. Yum! I got this wonderful recipe from my friend Shell Marr.

Tips:
- To make the perfect dish, choose firm, sweet apples that will hold their shape during baking. Granny Smith, Honeycrisp, or Braeburn are all good options.
- For a creamier scallop, use Yukon Gold or Russet potatoes. They have a higher starch content, which will help to thicken the sauce.
- If you don't have heavy cream on hand, you can substitute milk or evaporated milk. However, the sauce will be thinner.
- Grate the potatoes and apples using the large holes of a box grater. This will help them to cook evenly.
- To prevent the potatoes from browning, toss them with a little lemon juice or vinegar before baking.
- Bake the scallop until the top is golden brown and the potatoes are tender. This will take about 45 minutes.
- Serve the scallop hot with a dollop of sour cream or yogurt and a sprinkle of chopped fresh herbs.
Conclusion:
Apple sweet potato scallop is a delicious and comforting dish that is perfect for a weeknight meal. It is easy to make and can be tailored to your own taste preferences. With its sweet and savory flavors, this dish is sure to be a hit with your family and friends.
