1 garlic clove, cut into lengthwise strips

1/3 cup packed brown sugar

1/2 head red cabbage, cored and cut into 1-inch pieces (about 5 cups)
2 cloves garlic, thinly sliced
1 tablespoon plus 1 1/2 teaspoons olive oil
1 tablespoon plus 1 teaspoon apple cider vinegar
Kosher salt and freshly ground black pepper
1 1/4 pounds pork tenderloin, trimmed
1 teaspoon apple pie spice
4 teaspoons country Dijon mustard
3 tablespoons chopped fresh parsley
2 red apples, cored and cut into slices
1/2 cup reduced-fat sour cream
Four 6-ounce glasses reduced-fat milk, for serving

Steps:

  • Position an oven rack in the top third of the oven and preheat to 425 degrees F. Prepare the wild rice as per package instructions (discarding any included flavor packets). Keep warm and set aside.
  • Meanwhile, toss the cabbage, garlic, 1 tablespoon of the oil, 1 tablespoon of the vinegar, 1/4 teaspoon salt and a few grinds of pepper together on a baking sheet. Spread out leaving room for the pork tenderloin in the center.

Add the pork and cook, turning as needed, until brown on all sides, about 5 minutes. Place on the baking sheet and brush the top and sides of the pork with 2 teaspoons of the mustard. Roast until the cabbage is tender and the internal temperature of the pork registers 145 degrees F on an instant-read thermometer, 25 to 30 minutes. Transfer the pork to a cutting board to rest for a few minutes and then slice. Toss the parsley with the cabbage.
  • Toss the apples with the remaining 1/4 teaspoon apple pie spice. For the sauce, stir together the sour cream and the remaining 2 teaspoons mustard and 1 teaspoon vinegar. 1 * 1 bay leaf
3 * 3 cups cold water
2 * 2 (1-pound) pork tenderloins, trimmed

Chutney:
2 * 2 cups unsweetened apple juice
2 * 2 teaspoons black tea leaves (such as Darjeeling or Assam)
1 * 1 teaspoon butter
1 * 1 teaspoon olive oil
1 1/2 * 1 1/2 cups diced onion
4 * 4 cups diced peeled Rome apple (about 3 large)
1/2 * 1/2 cup golden raisins
2 * 2 tablespoons brown sugar
1 * 1 tablespoon cider vinegar

Discard cheesecloth bag. Add 3 cups water, and cool to room temperature. Pour liquid into a large heavy-duty zip-top plastic bag. Add pork tenderloins to bag; seal and marinate in refrigerator 8 hours or overnight, turning the bag occasionally. To prepare chutney, bring 2 cups juice to a boil in a large saucepan. Remove from heat. Stir in 2 teaspoons tea leaves, and steep for 2 minutes. Strain juice mixture through a sieve into a bowl; discard solids. Reserve juice mixture. Heat butter and 1 teaspoon oil in pan over medium-low heat. Add onion; cook for 20 minutes or until golden brown, stirring frequently. Stir in apple; cook 5 minutes. Add reserved juice mixture, raisins, and next 8 ingredients (through ground cloves). Bring mixture to a boil over medium-high heat; reduce heat to medium. Cook 30 minutes or until apple is tender and mixture is thick. Remove from heat. Preheat oven to 350°. Remove pork from bag; discard brine. Pat pork dry with paper towels. Brush pork with 1 teaspoon oil; sprinkle on all sides with 1/2 teaspoon white peppercorns and 1/2 teaspoon black peppercorns. Place pork on a broiler pan coated with cooking spray. Bake at 350° for 40 minutes or until a thermometer registers 160° (slightly pink). Place pork on a platter, and let stand for 5 minutes. Cut pork across the grain into thin slices.
