4 medium Honeycrisp apples, peeled and cut into 1-inch pieces (about 1-1/2 pounds)
2 cups sugar
1/2 cup canola oil
2 large eggs, room temperature
2 teaspoons vanilla extract
2 cups all-purpose flour
1 tablespoon pumpkin pie spice
2 teaspoons baking powder
1 teaspoon salt
1/2 cup buttermilk
1-1/2 cups chopped walnuts, toasted
FROSTING:
1 package (8 ounces) cream cheese, softened
1/2 cup butter, softened
1 cup confectioners' sugar
1 cup packed brown sugar
1-1/2 teaspoons vanilla extract
1 teaspoon pumpkin pie spice
1-1/2 cups chopped walnuts, toasted

Steps:

  • Preheat oven to 350°. Line bottoms of 2 greased 9-in. round baking pans with parchment; grease parchment., Place apples in a food processor; pulse until finely chopped. In a large bowl, beat sugar, oil, eggs and vanilla until well blended. In another bowl, whisk flour, pie spice, baking powder and salt; gradually beat into sugar mixture alternately with buttermilk. Stir in apples and walnuts., Transfer to prepared pans. Bake until a toothpick inserted in center comes out clean, 35-40 minutes. Cool in pans 10 minutes before removing to wire racks; remove paper. Cool completely., In a large bowl, beat cream cheese, butter, sugars, vanilla and pie spice until smooth. Spread frosting between layers and over top and sides of cake. Gently press walnuts into frosting on top of cake. Refrigerate leftovers.

I had a spice cake mix, a can of apple pie filling, and eggs. That is it. I then made a simple brown sugar frosting... Hope you try it... Thank you...

1 spice cake mix, i used duncan heinz
1 - 21 oz can apple pie filling - i chopped the slices up a bit
3 eggs
FROSTING
5 Tbsp unsalted butter
1/2 c packed brown sugar
1/4 tsp salt
3 Tbsp milk
1 1/2 c confectioners' sugar
1 tsp vanilla extract

Steps:

  • 1. Preheat oven to 350 degree F. Spray 9 x 13 baking dish with nonstick cooking spray.
  • 2. I chopped the apples into about 1 inch chunks. In a medium bowl, add cake mix, three eggs, and the apples with thickening.
  • 3. Using a spatula, mix well. Make sure all is incorporated well, batter will be thick.
  • 4. Spread into cake pan evenly.
  • 5. Bake for 30 minutes. When cake only has 5 minutes left; start the frosting if using.
  • 6. Frosting: In a small pan over medium heat, melt the butter. Stir in brown sugar and salt. Cook, stirring, until the sugar melts. Add the milk, bring to a boil, and pour into a mixing bowl. Cool for 10 minutes.
  • 7. Stir in confectioners' sugar and vanilla. Beat well; if the mixture seems too thin, add more confectioners' sugar. Use the frosting while it is still warm or it will firm up while it cools and you won't be able to spread it. I spread the frosting on the warm cake.
  • 8. You could also add nuts to the cake or frosting! Enjoy!!!!

1 1/2 cups unsweetened applesauce
1/3 cup buttermilk
1/3 cup butter
2/3 cup brown sugar, packed
2 tablespoons corn syrup
2 tablespoons milk
1/2 teaspoon vanilla
1 1/2 cups icing sugar, sifted

Steps:

  • For the cake, grease a 9" x 13" cake pan; line the bottom with parchment paper.
  • Set aside.
  • In a large bowl, beat the butter with the brown sugar until fluffy; beat in the eggs, one at a time.
  • Beat in the vanilla.
  • In a separate bowl, whisk together the flour, baking powder, salt, baking soda, cinnamon, ginger, allspice and nutmeg.

1/4 cup dark brown sugar
3/4 cup vegetable oil
2 large eggs
1 1/2 cups flour
1 1/2 teaspoons baking soda

1/8 teaspoon ground cloves
1/4 teaspoon salt
1 lb tart apple, peeled,cored,cut into 1 inch chunks (3 large Granny Smiths work well)
1/2 cup chopped walnuts or 1/2 cup pecans
1 tablespoon vanilla extract
1/4 cup unsalted butter
1/4 cup white sugar
1/4 cup dark brown sugar
1/4 cup heavy cream

Steps:

  • Heat oven to 350 degrees.
  • Butter a 9" spring form pan.
  • Place all cake ingredients into bowl of mixer.
  • Beat on lowest speed until apples are in 1/4" chunks and their juice has thinned the batter slightly.
  • This takes about 3 minutes.
  • Pour batter into prepared pan and smooth the top.
