CHUNKY APPLE SNACK CAKE

Chunky Apple Snack Cake image

We enjoy this cake as a snack, packed in lunches or as a scrumptious dessert when warmed and topped with a scoop of low-fat ice cream. If the batter seems really thick, don't worry: Once you stir in the apples it loosens up. -Cindy Beberman, Orland Park, Illinois

Time 15m

Yield 4 serving(s)

Number Of Ingredients 5

4 medium golden delicious apples, peeled & cored and sliced into rounds
1/2 cup apple juice
1/4-1/2 teaspoon cinnamon (I use 1/2 tsp)
1/4 teaspoon nutmeg (this is my addition)
1 tablespoon grated lemon peel

Steps:

  • In an 3 quart microwave safe baking dish, arrange the apples into two rows.
  • Pour apple juice over apples.
  • Sprinkle with spices and lemon peel.
  • Cover and microwave on HIGH for 7 minutes or until apples are tender - turning midway through.

Tips:

  • Choose the right apples: Use firm, crisp apples that hold their shape when baked, such as Granny Smith, Honeycrisp, or Pink Lady.
  • Use a variety of toppings: Don't be afraid to experiment with different toppings, such as cinnamon, nutmeg, ginger, or even a drizzle of maple syrup.
  • Don't overcook the apples: The apples should be tender but still have a slight bite to them. Overcooking will make them mushy.
  • Serve immediately: Apple snacks are best served warm from the oven. They can also be served cold, but the texture will be slightly different.

Conclusion:

Apple snacks are a delicious and healthy way to satisfy your sweet tooth. They are also a good source of fiber, vitamins, and minerals.
