2 cups diced unpeeled red apples (such as Red Delicious, Gala, or Honey Crisp) ((about 1.5 medium apples))
1/4 cup golden raisins
1 tablespoon apple juice ((or sub with orange juice or lemon juice))
5.3 ounces (about 1/2 cup) Greek-style vanilla yogurt
1/4 cup light mayonnaise
1/2 teaspoon apple pie spice ((can substitute with ¼ teaspoon cinnamon and 1/4 teaspoon of nutmeg))
¼ cup chopped toasted pecans
¼ cup unsweetened shredded coconut
