Although I haven't made this cake yet, I came across it when I was looking for recipes using fresh sage. This is a great way to use both garden sage and apples for a simple cake with a hint of sage. For the more adventureous add more sage. This recipe has been adjusted for high altitude areas (adjusted for 5000 feet) so be very careful and adjust ingredients, cooking temp and cooking time if cooking at sea level. 2 cups flour
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
12 tablespoons butter or 12 tablespoons margarine
3/4 cup brown sugar, plus
2 tablespoons brown sugar
2 eggs
2 teaspoons water
1 tablespoon minced fresh sage
1 cup sage honey applesauce (see recipe#73256) or 1 cup use your favorite applesauce
1 tablespoon lemon juice
1 tablespoon lemon juice
2 apples, peeled and cored
1 cup sugar

Steps:

  • Grease bundt pan with 2 tablespoons butter (or margarine).
  • Preheat oven to 350-degrees F.
  • Sift together first 5 ingredients (flour- cinnamon).
  • In a seperate bowl cream 10 tablespoons butter (or margarine) and sugar until light.
  • Beat in eggs, water and sage.
  • Stir in applesauce.
  • Stir in dry ingredients slowly.
  • Peel and slice apple.
  • Sprinkle apples with lemon juice.
  • Place layers of apple slices on bottom and sides of prepared pan.
  • Pour in batter carefully, trying not to disturb apple slices.
  • Bake for 30-40 minutes or until toothpick comes out clean.
  • Cool 1 hour before turning onto plate for serving.

3 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons cinnamon
½ teaspoon nutmeg
½ teaspoon salt
1 ½ cups vegetable oil
1 ½ cups granulated sugar
½ cup brown sugar
3 eggs
2 teaspoons vanilla
3 large apples, peeled and cut into large pieced (Note: The original recipe calls for tart green apples, but we used some red Cortland apples we had on hand and it was delicious!)
1 cup chopped walnuts (optional)
3 tablespoons butter
3 tablespoons brown sugar
3 tablespoons granulated sugar
3 tablespoons heavy cream
¼ teaspoon vanilla

Steps:

  • Preheat oven to 325 degrees. Grease and flour a 12-cup Bundt pan and set aside.
  • In a large bowl, sift together flour, baking soda, cinnamon, nutmeg and salt. Sift two additional times and set aside.
  • In the bowl of a stand mixer, combine oil and both sugars, and mix until well blended.
  • Add eggs one at a time, mixing thoroughly after each addition. Add vanilla and mix again.
  • Add the sifted dry ingredients to the batter and mix thoroughly. By hand, fold in apples and walnuts and mix until evenly combined.
  • Spoon the batter into the prepared bundt pan. Bake for 1 hour and 15 minutes or until a toothpick inserted into the center of the cake comes out clean.
  • Remove cake from the oven and allow to cool in the bundt pan for 20 minutes.
  • While the cake is cooling, prepare the glaze. In a saucepan, over medium heat, combine all of the glaze ingredients. Bring to a boil and allow the mixture to boil for 1 minute.
  • Remove the cake from the pan, onto a serving plate. Spoon the glaze over the warm cake.
  • Cool for a little longer before serving.

3 large eggs
1 1/2 cups raw sugar
3/4 cup canola oil
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking soda

1 cup dried apple (Measured Loosely)
2 cups filtered water
1/2 cup old fashioned oats
2/3 cup vital wheat gluten
3 tablespoons nutritional yeast flakes
1/4 cup almond meal or 1/4 cup flour
1/2 cup brown rice, Cooked
1 tablespoon ground flax seeds
1 teaspoon sugar
1 teaspoon rubbed sage
1 teaspoon garlic powder
1 teaspoon lemon pepper
1/4 teaspoon ground thyme
1/8 teaspoon ground cloves
1/8 teaspoon crushed red pepper flakes
1/8 teaspoon crushed fennel seed
1/2 teaspoon salt
2 tablespoons liquid from apples
1 tablespoon liquid smoke
1 teaspoon seasoned Chinese white rice vinegar

Steps:

  • Place apples and water in a medium saucepan on medium heat and cook for about 15 minutes. After they have cooked reserve left over liquid from cooking the apples. Spread the apples out and allow them to cool.
  • In a food processor pulse the oats a few times to break them up. Pour into a medium sized mixing bowl with the wheat gluten, nutritional yeast flakes, almond flour, brown rice, flaxseed, sugar, sage, garlic powder, lemon pepper, thyme, clove, pepper flakes, fennel and salt.
  • Put apples in the food processor and add the 2 tablespoons of the reserved apple water, liquid smoke and vinegar. If there was no water left from cooking the apples, just add water. Puree for 2 minutes. To this add the dry ingredients from the mixing bowl and process until it mixes together and forms a ball in the processor. Take out of processor and place back into the mixing bowl.
  • Preheat oven 300 degrees.
  • To make the sausages, measure out 1 tablespoon for each sausage link. A tip, rubbing some oil inside the tablespoon helps the sausage dough from sticking to the spoon. First roll the dough into a ball, then between your hands to get the shape started. Then place it on a piece of wax paper and roll into a 3 1/2 inch link.
  • Place them on a greased cookie sheet, spray the tops with a little oil, cover with aluminum foil loosely and place into the oven for 15 minutes. Turn them over, cover again and cook them another 15 minutes. Let rest for 5 minutes before eating.
  • These can be frozen and reheated in the microwave.

Steps:

  • Preheat oven to 350 degrees. In a large bowl, whisk together flour, baking soda, salt, cinnamon, and cardamom. Set aside.
