cooking spray
2 tablespoons butter
1 large onion, sliced
salt, plus more to taste
4 teaspoons white sugar
5 medium apples - peeled, cored, and cut into 1/4-inch slices
1 pound Yukon Gold potatoes, cut into 1/4-inch slices
2 tablespoons olive oil
6 bone-in, skin on chicken thighs
2 tablespoons chopped fresh rosemary
ground black pepper

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Spray the top and bottom parts of a broiler pan with cooking spray.
  • Melt butter in a skillet over medium heat and add onion slices. Sprinkle onions with 1 teaspoon salt and saute for 2 minutes. Add sugar and continue cooking until onions are translucent but not browned, 6 to 8 minutes. Remove from heat.
  • Layer apples, potatoes, and sauteed onion slices in the bottom part of the broiler pan. Cover with the part top of the broiler pan.
  • Drizzle olive oil over chicken thighs. Sprinkle with fresh rosemary, salt, and pepper. Rub olive oil and spices thoroughly all over each thigh and place on the top part of the broiler pan.
  • Roast in the preheated oven until juices run clear and an instant-read thermometer inserted into the thickest part of the thigh, near the bone, reads 165 degrees F (74 degrees C), about 1 hour. Serve apples, potatoes, and onion alongside chicken thighs.

Time 30m

Number Of Ingredients 9

1/2 tablespoon unsalted butter
1/2 tablespoon extra-virgin olive oil
1 small sweet onion, thinly sliced (about 1 cup)
2 small red apples, sliced
1 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch strips
1 heaping tablespoon fresh rosemary, finely chopped, divided
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons apple cider vinegar

Steps:

  • Heat butter and oil in a large saute pan over medium-high heat.
  • Add onion and apple slices and saute for 4-5 minutes, until softened and slightly browned.
  • Meanwhile, season the chicken strips with 2 teaspoons of rosemary, salt and black pepper.
  • Push the onion and apple slices to the sides of the pan and add chicken breast strips to the middle. Brown on both sides, about 6-8 minutes total. (If your pan is too crowded, do this in batches so you can properly brown the chicken.)
  • Add vinegar and remaining teaspoon of rosemary then cover the pan, reduce heat to medium and cook until chicken is cooked through, 3-5 more minutes.
  • Serve chicken and apples with extra pan juices and enjoy!

ROAST CHICKEN WITH APPLES, LEEKS, AND ROSEMARY

Roast Chicken with Apples, Leeks, and Rosemary image

This is a favorite of mine, my friend introduced us to it. It's really simple, very few ingredients, and tastes amazing! So easy, low prep time, and great flavor results. Mmmmm. I serve this with couscous and you can even chop some of the apples and rosemary up from the dish and mix into the couscous.

Tips for Making Apple-Rosemary Chicken:

  • Choose the right chicken. For this recipe, bone-in, skin-on chicken breasts or thighs work best. The bones and skin help keep the chicken moist during cooking.
  • Use fresh rosemary. Dried rosemary will not have the same flavor as fresh rosemary. If you don't have fresh rosemary, you can use 1 teaspoon of dried rosemary instead.
  • Don't overcrowd the pan. If you overcrowd the pan, the chicken will not cook evenly. Make sure there is enough space between each piece of chicken so that it can brown properly.
  • Cook the chicken over medium heat. Cooking the chicken over medium heat will help it cook evenly and prevent it from burning.
  • Baste the chicken with the pan juices. Basting the chicken with the pan juices will help it stay moist and flavorful.
  • Roast the chicken until it is cooked through. The chicken is cooked through when it reaches an internal temperature of 165 degrees Fahrenheit.

Conclusion:

Apple-rosemary chicken is a delicious and easy-to-make dish that is perfect for any occasion. It is a great way to use up leftover chicken, and it can be served with a variety of sides, such as mashed potatoes, roasted vegetables, or rice.
