LIKE MOST women of her generation, my husband's grandmother was a "no-measure cook". This recipe of hers suffered as it was handed down, so I made an effort to work out the kinks. 1-1/4 cups uncooked brown rice
4 tablespoons butter, divided
2-1/2 cups chunky applesauce
1 cup diced peeled apples
1/4 cup packed brown sugar
1-3/4 teaspoons ground cinnamon, divided
Dash salt

Steps:

  • Cook rice according to package directions. Stir 2 tablespoons butter into hot rice. Add applesauce, apples, brown sugar, 1-1/2 teaspoons cinnamon and salt. Spoon into a greased deep 2-qt. baking dish. Dot with remaining butter; sprinkle with remaining cinnamon. Bake, uncovered, at 350° for 35 minutes or until heated through. Serve warm or cold.

6 -8 peeled sliced apples
1 tablespoon lemon juice
2 tablespoons water
3/4 cup white sugar (or more if desired, OR half of EACH white sugar with brown sugar)
1/2 cup flour
1 1/2 teaspoons cinnamon
1/4 teaspoon salt
1/4 cup butter, cold, and cut into small cubes

Steps:

  • Set oven to 350 degrees.
  • Butter a 2-qt casserole.
  • Place sliced apples in prepared casserole dish.
  • In a bowl, mix lemon juice and water; pour over the apples.
  • In another small bowl, mix sugar, flour, cinnamon and salt; pour over the apples and the lemon/water mixture.
  • Dot with chopped butter on the top.

2 tablespoons butter, divided
2 medium skinless, boneless chicken breast halves
1 (6.9 ounce) package chicken-flavored rice mix (such as RICE-A-RONI®)
1 ¼ cups water
1 cup apple juice
1 apple - peeled, cored, and chopped
1 onion, chopped
¼ cup raisins

Steps:

  • Melt 1 tablespoon butter in a skillet over medium-high heat. Add chicken and cook, 2 minutes per side. Remove and set aside.
  • Heat remaining butter over medium heat in the same skillet. Saute rice from rice mix in the hot butter until golden brown, 5 to 7 minutes.
