1 refrigerated pie pastry
FILLING:
5 cups thinly sliced peeled Fuji apples (about 5 medium)
2 cups sliced fresh or frozen rhubarb (1/2 inch thick), thawed
1/2 cup sugar
3 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
TOPPING:
1/3 cup all-purpose flour
1/4 cup sugar
1/4 cup quick-cooking oats
1/8 teaspoon salt
1/8 teaspoon ground cinnamon
2 tablespoons butter

Steps:

  • Preheat oven to 375°. Unroll pastry sheet into a 9-in. pie plate; flute edge. Refrigerate while preparing filling and topping., In a large bowl, combine apples and rhubarb. In a small bowl, mix sugar, flour and cinnamon; add to apple mixture and toss to coat. In a small bowl, mix the first five topping ingredients; cut in butter until crumbly. Transfer filling to crust; sprinkle with topping., Bake 50-60 minutes or until topping is lightly browned and filling is bubbly. Cover edge loosely with foil during the last 20 minutes if needed to prevent overbrowning. Remove foil. Cool on a wire rack.

375g pack dessert pastry
250g rhubarb , cut into small pieces
300g eating apple , peeled, cored and cut into small pieces
2 tbsp caster sugar
juice 1 orange
150ml double cream
150ml milk
1 vanilla pod , halved
3 eggs
85g caster sugar
zest 1 orange

Steps:

  • Heat oven to 190C/170C fan/gas 5. Roll out the pastry to the thickness of £1 coin and use it to line a 23cm tart tin. Cut a round of baking paper bigger than the tin and place in the tin with baking beans on top. Bake blind for 15 mins, then remove the beans and bake for a further 10-15 mins until lightly golden. Remove the tart from the oven and turn the oven down to 160C/140C fan/gas 3.
  • While the tart is in the oven, prepare the filling. Gently heat the rhubarb, apple, caster sugar and orange juice in a small pan for 10 mins until fruit is soft, but still holding its shape. Once cooked, remove from the heat and leave to cool slightly while you make the custard.
  • Heat the cream, milk and vanilla pod in a small pan and bring to the boil. Whisk the eggs and sugar in a separate bowl. When the cream mix has reached boiling point, pour this over the eggs while still whisking, then pour the mix through a sieve into a clean bowl or jug and add the orange zest.
  • Once the tart case is cooked, scatter the fruit over the bottom of the case and pour the custard on top. Place the tart in the oven and cook for 30-35 mins until the custard is just set. Remove from the oven and leave to cool completely before cutting into slices.

4 cups sliced rhubarb
1 cup peeled and chopped apple
1 2/3 cups sugar
1/3 cup all-purpose flour
1 dash ground cinnamon
1 tablespoon butter
1 pastry for double-crust pie

Steps:

  • Preheat oven to 400'F.
  • For the filling:.
  • In a large saucepan combine the rhubarb, apple, sugar, flour and cinnamon.
  • Cook and stir over medium heat just until the mixture thickens. Remove from heat and add the butter. Cool.
  • In the meantime, prepare a pastry shell for a double crust pie.
  • To assemble the crust:.
  • On a lightly floured surface, roll one half of the dough from the center out to form a 12 inch circle. Place this into a 9 inch pie dish.
  • Trim to 1/2 inch beyond the edge of the plate.
  • Put the prepared filling into the pie shell.
  • Roll the remaining pie dough out and form it into a 12 inch circle.
  • Cut the pastry (for the lattice) into 3/4 to 1 1 1/4 inch strips.
  • Weave the strips over the filling in a lattice pattern. Press the ends of the strips into the crust edge. Fold the bottom pastry over the ends of the strips; crimp the edge.
  • To prevent the edges of the crust from burning cover with tin foil.
  • You might want to put this on a baking sheet with edges so the bottom of your oven doesn't get any filling on it.
  • Bake the pie for 25 minutes. The remove the foil and bake for an additional 25 minutes or until the center is bubbly and the crust golden.
  • Cool on a wire rack.

1 lb pastry dough, base
1 pint milk
2 eggs
4 egg yolks
2 ounces sugar
3 stalks rhubarb
3 ounces sugar
2 tablespoons water

Steps:

  • preheat oven to 180c.
  • grease an 8 inch tart dish.
  • Roll out pastry and line the dish with it.
  • Blind bake (place a sheet of grease proof paper over pastry and weight down with dried beans or pulses) for 15 minutes. Remove from oven and leave to cool.
  • Reduce oven heat to 130c.
  • Meanwhile, Add sugar to milk and heat in a saucepan to just before boiling point.
  • Beat eggs and egg yolks together.
  • slowly add the heated milk to the eggs, stirring all the time.
  • Return to the saucepan and cook for 10 minutes on a low heat, stirring constantly.
  • On a medium heat cook rhubarb with water and sugar until rhubarb softens and becomes a jam-like in consistency.
  • Spread rhubarb on pie crust, slowly pour custard over rhubarb filling, try not to disturb the rhubarb.
  • Cook for 40 minutes in oven. until Custard begins to brown.
