1 medium Vidalia or other sweet onion, sliced 1 inch thick
2 celery stalks, sliced 1/2 inch thick on the diagonal
Coarse salt
2 cups sugar
1 cup cider vinegar
1 teaspoon celery seed
1 teaspoon mustard seed

Tips:

  • Choose the right apples: Use firm, crisp apples that will hold their shape well when pickled. Granny Smith, Honeycrisp, and Braeburn are all good choices.
  • Make sure the pickling liquid is completely cool before pouring it over the apples. This will help to prevent the apples from becoming mushy.
  • Store the pickles in a cool, dark place. This will help them to retain their flavor and crispness.
  • Enjoy the pickles within a few weeks. They will start to lose their flavor and crispness after that.

Conclusion:

Apple refrigerator pickles are a quick and easy way to enjoy fresh apples all year long. They are a delicious and versatile snack, and they can also be used in salads, sandwiches, and other dishes. So next time you have a few extra apples on hand, be sure to try making a batch of these pickles. You won't be disappointed!
