2-1/4 cups water
1 cup sugar
3 cups sliced peeled tart apples
3 tablespoons lemon juice
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
3 cups cooked long grain rice
1/2 cup raisins
2 tablespoons plus 1-1/2 teaspoons butter
2 teaspoons vanilla extract
1/2 cup plus 2 tablespoons reduced-fat whipped topping

Steps:

  • In a large saucepan, bring water to a boil; add sugar. Cook and stir until sugar is dissolved. Stir in the apples, lemon juice and spices.
