Time 1h25m

Yield 12 servings

Number Of Ingredients 12

3 1/3 cups all purpose flour
1/2 teaspoon baking powder
11/2 teaspoons salt
1/2 teaspoon nutmeg
1/2 teaspoon allspice
2 teaspoons ground cinnamon
2 teaspoons baking soda
2/3 cups vegetable shortening
2 1/3 cups sugar
4 eggs
2 cups applesauce
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees. Grease 2 (2 1/2-inch) wide-mouth canning jars with a paper towel dipped in shortening.
  • Sift flour, baking powder, salt, nutmeg, allspice, cinnamon, and baking soda into a large bowl. Using the electric mixer and a medium mixing bowl, cream together the shortening and sugar on low speed, then increase to medium mixing speed to mix well. While the mixer is running, add the eggs, one at a time. Stop the mixer and scrape down the sides. Remove the bowl from the mixer and stir in the applesauce. With a large spoon, stir in the sifted flour mixture and the walnuts. Pour the batter into a measuring cup with a spout; pour the batter neatly into greased jars. Fill the jars halfway full. Place the filled jars on the sheet tray and bake on the center rack of the oven for 45 minutes. When done, the top of the cake will spring back when pressed with a finger, and the sides will have come away from the jar. Remove from oven and let cool 10 to 15 minutes. Cake will still be warm, but not hot. Place a circle of waxed paper on top of the jar and seal with the jar lid. Place carefully so as not to break the glass.

The girls and boys in my junior high home economics classes like this cake because it's not too sweet. I like it because it has high fiber and nutritional value-the apples are used unpeeled. Parents who have apple trees are always glad to donate the apples!

APPLE CAKE IN A JAR WITH LEMON SAUCE

Apple Cake in a Jar With Lemon Sauce image

Ever baked cakes in canning jars? It's neat! ANY quick bread-type cake can be baked in canning jars. Lighter cakes tend to fall once the jar seals. I usually bake one jar first -- you have to know how high the batter rises. I usually fill ONE jar 1/2 full then bake it to see how high it rises, then go from there. You don't want the cake to come out of the top of the jar, only to within 1/4 to 1/2 inch from the lip of the jar. Write it down on your recipe (how far you filled the jars)! Once you've established how high the cake rises, you can go from there. The first time around is a bit tricky because you won't know how many jars you'll need. MOST of the recipes I've tried I end up using around 8. Sterilize as many jars as you think you'll need and go from there. Make sure your LIDS are new, the rings don't ha ve to be As the jars do seal, the cakes are as moist as the day you put them into the jars--sometimes MORE SO. The baking times will vary.

Tips:

  • Use fresh apples: Fresh apples provide the best flavor and texture for this cake. If you can, use a variety of apples, such as Granny Smith, Honeycrisp, or Pink Lady.
  • Peel and core the apples: Be sure to peel and core the apples before grating them. This will help to remove any unwanted bitterness from the peel and seeds.
  • Grate the apples: The easiest way to grate the apples is to use a box grater. You can also use a food processor fitted with the grating blade.
  • Use a good quality jar: Choose a jar that is large enough to hold all of the cake batter and that has a tight-fitting lid. Mason jars work well for this purpose.
  • Fill the jars halfway: Do not fill the jars all the way to the top, as the cake will rise as it bakes. Leave about 1 inch of headspace at the top of each jar.
  • Bake the cakes in a water bath: This will help to prevent the cakes from drying out. Place the jars in a baking dish filled with hot water and bake for the specified time.
  • Let the cakes cool completely: Once the cakes are baked, let them cool completely before serving. This will help the cakes to set properly.
