PINEAPPLE CRUMBLE

Pineapple Crumble image

When I saw this recipe in Appeal magazine, I knew that I had to try it. I love trying things that are "just a bit different". I served this warm with some vanilla ice cream. My DH said that it reminded him of Hawaii!!! This could be made easier by using 3 cans of pineapple chunks with their own juice

Provided by Abby Girl

Categories     Dessert

Time 1h

Yield 6-8 serving(s)

Number Of Ingredients 11

1 small pineapple, about 1-1/2 to 2 lb, peeled, quartered, and diced (core chopped and reserved)
1 tablespoon butter
4 tablespoons sugar, divided
1 teaspoon vanilla
1 tablespoon lemon juice
1 tablespoon dark rum (or Grand Marnier)
1 teaspoon cornstarch (mixed with 2 tsp water)
1 1/4 cups flour
1/3-1/2 cup sugar (depending on sweetness of pineapple)
1/2 teaspoon vanilla
1/4 cup butter, cut into fine dice

Steps:

  • Weight the diced pineapple and reserve 1 lb for the crumble. Process enough of the remaining pineapple, including the chopped core, in a food processor or juicer to obtain 1/4 cup juice, saving remaining juice for another use.
  • Heat butter in a large saucepan and add the reserved 1 lb pineapple, 3 T of the sugar and vanilla. Saute over medium heat for 5 minutes. Transfer to a bowl. Place the reserved 1/4 cup pineapple juice, remaining 1 T sugar, lemon juice, rum and cornstarch mixture in a small saucepan.
  • Cook over low heat, stirring constantly, until mixture thickens and clears. Add juice mixture to cooked pineapple and stir well to mix.
  • To make crumble topping: Combine flour, sugar, vanilla and butter in a food processor. Pulse until mixture resembles bread crumbs; do not over mix.
  • Preheat oven to 350. Transfer cooked pineapple mixture into a large dish. Sprinkle with the crumb topping and bake until golden brown, about 30 - 40 minutes.
  • Serve warm.

APPLE CRUMBLE

Apple Crumble image

Apple crumble is one of those desserts all cooks should have in their back pockets. It's a no-fuss favorite that works as well for dessert with a big scoop of ice cream as it does for breakfast with some plain, whole-milk yogurt. This recipe starts with a hefty crumb mixture, studded with pecans and old-fashioned rolled oats. Plenty of butter and sugar ensure the crumb stays crisp after baking, creating a delightful textural contrast between topping and tender fruit. Using a mix of sweet and tart apples that soften at slightly different rates also keeps this recipe interesting.

Tips:

- To achieve the perfect crumble topping, use a combination of butter, flour, and oats. For a crunchy texture, opt for rolled oats, while quick-cooking oats will yield a softer topping. Ensure the butter is cold and cut into small pieces to create pea-sized crumbles. - Apples are the star of this crumble, so choose a variety that holds its shape well when baked, such as Granny Smith or Braeburn. Peel and slice the apples thinly and evenly for consistent cooking. - Add raisins and pineapple to the apple mixture for a delightful combination of flavors and textures. The raisins provide a chewy sweetness, while the pineapple adds a tropical tang. Adjust the amount of each ingredient based on your personal preference. - For a crispy and golden-brown topping, sprinkle a generous amount of demerara sugar over the crumble before baking. The sugar will caramelize in the oven, creating a delicious crust. - Serve the apple, raisin, and pineapple crumble warm with a scoop of vanilla ice cream or custard for a comforting and indulgent dessert. The contrasting temperatures and textures will elevate the overall experience.
