1/4 cup butter, softened
1 cup sugar
1 egg
1 cup all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground nutmeg

2 cups grated peeled tart apples
1/4 cup chopped walnuts
1 teaspoon vanilla extract
4 cups low-fat vanilla frozen yogurt

Steps:

  • In a bowl, beat together the butter, sugar and egg until blended. In a bowl, combine the flour, baking soda, salt, nutmeg and cinnamon; gradually add to the sugar mixture and mix well. Stir in the apples, walnuts and vanilla until well combined., Spread mixture into an 8-in. square baking dish coated with cooking spray. 1/4 cup shortening
1/2 cup sugar
1 egg, beaten
1/2 cup milk
1 cup flour
2 teaspoons baking powder
1/4 teaspoon salt

1 cup brown sugar
1 tablespoon butter
1 tablespoon flour
1/2 teaspoon vanilla
1 1/2 cups water

Steps:

  • Slice peeled apples into a greased 8x8 baking dish; sprinkle with cinnamon.
  • Cream shortening, sugar and egg together; then add milk alternately with dry ingredients.
  • Add vanilla.

1 1/4 c sifted flour
1 tsp baking powder
1/2 tsp baking soda
1/3 c butter, room temp or crisco
1/2 tsp grated lemon rind
1 tsp vanilla
1 c sugar
1 egg, room temperature
1 1/2 c diced uncooked apples
VANILLA SAUCE
1/3 c sugar
1 Tbsp cornstarch
1/8 tsp salt
1 c water
2 Tbsp butter, soft
1/4 tsp grated lemon rind
1/2 tsp vanilla

Steps:

  • 1. Pudding: (I left out the 1/4 tsp. salt and could not add it above, sorry.) Sift together the flour, salt, baking soda and baking powder. Set aside.
  • 2. In a large bowl, cream butter with lemon rind, vanilla and sugar. Beat in egg. Stir in flour mixture. Add apples and mix ONLY until blended.
  • 3. Turn into a greased and floured 8x8x2-inch pan. Bake in preheated 350 degree oven for 45 minutes or until done.
  • 4. Vanilla Sauce: In a medium saucepan over medium heat, combine sugar with cornstarch and salt. Gradually stir in water and mix well. Cook until medium thickness.
  • 5. Remove from heat and stir in butter, lemon rind and vanilla. Serve warm over apple pudding and thoroughly enjoy!

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 2-quart baking dish.
