PORK CHOPS WITH SAUERKRAUT AND APPLE

Pork Chops With Sauerkraut and Apple image

This is a great recipe for people who think they don't like sauerkraut, as it's very mild and sweet prepared this way. I never would have thought of using wine in a sauerkraut dish, but it's great. Source lost in the mists of time.

Provided by duonyte

Categories     Pork

Time 30m

Yield 4 serving(s)

Number Of Ingredients 6

4 pork chops
olive oil or butter
1 lb sauerkraut, rinsed with fresh water and drained
1 large tart apple, peeled, cored and diced
1 medium onion, chopped
1 cup riesling wine

Steps:

  • Salt and pepper the chops and brown them in hot oil or butter, about 3 minutes per side. Set aside.
  • Add the apple and onions to the same skillet and cook for about 5 minutes, until the onion starts to look golden.
  • Add the wine and stir, scraping up all the browned bits, and cook for an additional 3 minutes.
  • Stir in the sauerkraut, and place the chops on top, including any juices that have collected. Cover the skillet, lower the heat and cook until the chops are done, about 7 minutes, depending on thickness. Do not overcook.
  • Note1: I've also made this successfully with chardonnay, but riesling is the best.
  • Note2: Sauerkraut packed in plastic bags and sold in the refrigerator case tastes much better than the canned.

Tips:

  • To achieve tender and juicy pork chops, opt for thicker cuts, at least 1-inch in thickness. This allows for even cooking and prevents overdrying.
  • Enhance the flavor of your pork chops by marinating them for at least 30 minutes or up to overnight. A simple marinade made with olive oil, herbs, spices, and citrus juice works wonders in infusing flavor.
  • For a crispy and golden-brown exterior, sear the pork chops over medium-high heat before reducing the temperature to medium-low for even cooking throughout.
  • Use an instant-read meat thermometer to ensure that the pork chops reach an internal temperature of 145 degrees Fahrenheit for medium-rare, 155 degrees Fahrenheit for medium, and 165 degrees Fahrenheit for well-done.
  • Rest the pork chops for a few minutes before slicing and serving. This allows the juices to redistribute, resulting in more tender and flavorful meat.

Conclusion:

With a few simple tips and the versatility of pork chops, you can create a wide range of delectable dishes that cater to various tastes and preferences. From classic pan-fried pork chops to flavorful grilled or baked preparations, the possibilities are endless. Experiment with different marinades, seasonings, and cooking methods to discover your favorite way to enjoy this versatile cut of meat.
