1/2 cup pomegranate seeds
1/2 cup chopped pecans or walnuts, toasted
1/2 cup shredded Parmesan cheese
1 large Granny Smith apple, chopped
1 tablespoon lemon juice
1/4 cup olive oil
1/4 cup white wine vinegar
2 tablespoons sugar
1/4 teaspoon salt

Steps:

1 cup Pomegranate Vinaigrette (see below)
Kosher salt and freshly ground pepper
3 tablespoons pomegranate molasses
2 tablespoons red wine vinegar

Salt and pepper
1 tablespoon orange zest plus 1/2 cup orange juice
2 tablespoons extra-virgin olive oil
1 package (8 ounces) cooked beets, thinly sliced
5 ounces baby arugula or mixed greens (5 cups)
2 red apples, quartered, cored, and thinly sliced
1 cup pomegranate seeds
