1-1/4 cups all-purpose flour
3/4 cup graham cracker crumbs
3/4 cup quick-cooking oats
3/4 cup packed brown sugar, divided
1/4 cup sugar
3/4 cup butter, melted
2 large Granny Smith apples, peeled and chopped
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/8 teaspoon ground cloves
GLAZE:
1/2 cup confectioners' sugar
1 tablespoon 2% milk

Steps:

  • Preheat oven to 350°. Mix flour, cracker crumbs, oats, 1/2 cup brown sugar and sugar. Stir in butter. Reserve 1 cup crumb mixture for topping. Press remaining mixture onto bottom of a greased 13x9-in. pan. Bake until set, 8-10 minutes. Cool on a wire rack., Mix apples, spices and remaining brown sugar. Spread over crust; sprinkle with reserved topping. Bake until apples are tender, 30-35 minutes. Cool completely in pan on a wire rack., Mix confectioners' sugar and milk; drizzle over top. Cut into bars.

This is the first on the dessert table to be devoured at any function or festivity! I made this up from a pie I had eaten at a restaurant years ago. This recipe makes two deep dish pies.

2 ounces butter
½ cup packed brown sugar
½ cup all-purpose flour
1 cup chopped pecans
9 apple - peeled, cored and sliced
¼ cup white sugar
1 tablespoon all-purpose flour
1 teaspoon ground cinnamon
2 recipes unbaked pie shells

Steps:

  • Preheat oven to 350 degrees F (175 C).
  • Prepare the topping by combining the butter, brown sugar, flour and chopped pecans. Cut in all ingredients with pastry cutter until pea-sized. Set aside
  • Combine the apples, sugar, flour and cinnamon. Toss gently together and set aside.
  • Place apple mixture in unbaked pie shells. Heap the apples up high in each shell and fill completely. Sprinkle topping on top of each.
  • Bake at 350 degrees F (175 degrees C) for 50 minutes. Do not allow topping to get too dark.

1 pound (4 sticks) unsalted butter, at room temperature
3/4 cup granulated sugar
1/2 cup light brown sugar, lightly packed
2 teaspoons pure vanilla extract
4 cups all-purpose flour
1 1/2 teaspoons kosher salt
1/2 cup chopped walnuts
1 teaspoon ground cinnamon
1 1/2 pounds Granny Smith apples, peeled, quartered, cored, and sliced 1/8 inch thick (3 large)
1 1/2 pounds Golden Delicious apples, peeled, quartered, cored, and sliced 1/8 inch thick (3 large)
2 tablespoons freshly squeezed lemon juice
1/4 cup granulated sugar
1 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
4 tablespoons (1/2 stick) unsalted butter

Steps:

  • Preheat the oven to 375 degrees.
  • For the crust, place the butter, granulated sugar, brown sugar, and vanilla in the bowl of an electric mixer fitted with the paddle attachment and beat on medium speed for 2 minutes, until light and creamy. Sift the flour and salt together and, with the mixer on low, slowly add to the butter-sugar mixture, beating until combined. Scatter two-thirds of the dough in clumps in a 9 x 13-inch baking pan and press it lightly with floured hands on the bottom and 1/2 inch up the sides. Refrigerate for 20 minutes. Bake for 18 to 20 minutes, until the crust is golden brown, and set aside to cool.
  • Meanwhile, put the mixing bowl with the remaining dough back on the mixer, add the walnuts and cinnamon, and mix on low speed to combine. Set aside.
  • Reduce the oven to 350 degrees.
  • For the filling, combine the Granny Smith and Golden Delicious apples and lemon juice in a very large bowl. Add the granulated sugar, cinnamon, and nutmeg and mix well. Melt the butter in a large (10-inch-diameter) pot, add the apples, and simmer over medium to medium-low heat, stirring often, for 12 to 15 minutes, until the apples are tender and the liquid has mostly evaporated. Spread the apples evenly over the crust, leaving a 1/2-inch border.
  • Pinch medium pieces of the remaining dough with your fingers and drop them evenly on top of the apples (they will not be covered). Bake for 25 to 30 minutes, until the topping is browned. Cool completely and cut into bars.

Okay, this is a recipe I found on Pinterest and then tracked it down to the original. It was alright, but needed some major spice kick. So, I adapted the original with just a few additions, pan change, and switched the apple variety. I personally like skipping the glaze, serving it HOT with a big scoop of vanilla ice cream!

CRUMB PASTRY
2 cups all-purpose flour
1/2 cup sugar
1/2 teaspoon baking poweder
1/2 teaspoon salt
1 cup butter, softened (no substitutes)
1 egg, beaten
APPLE FILLING
4 cups granny smith apples, peeled and sliced (about 4)
1/2 cup sugar
1/4 cup all-purpose flour
3 heaping teaspoons of cinnamon
1/2 teaspoon of cloves
1/4 teaspoon of nutmeg
GLAZE
2 cups confectioners' sugar
about 3 tablespoons milk
1 teaspoon vanilla extract

Steps:

  • 1. Preheat oven to 350 °. Crust: Combine flour, sugar, salt, and baking powder in a medium bowl. Cut in butter (you can use a blender, pastry blender, forks, etc) until you have pea sized crumbles. Gently mix in beaten egg.
  • 2. Spray an 8x8 baking dish with cooking spray. Gently press about 2/3 of the crumb mixture into the bottom of the dish. Set aside.
  • 3. Filling: In a large bowl combine sliced apples, flour, sugar, cinnamon, cloves, and nutmeg. Toss to combine, until apples are well coated. Spread apples onto crumb pastry crust. Sprinkle reserved crust mixture evenly over the top of the apples slices. Bake for 45-55 minutes.
  • 4. If doing glaze cool cake completely. Glaze: In a small bowl whisk together powdered sugar, extract, and enough milk to reach desired consistency. Drizzle glaze over cooled bars and allow to harden.
