1 1/2 c sugar (im pretty sure he adds 2 cups)
3 stick long cinnamon sticks
1 l everclear (corn whiskey)

  • 2. Once mix is boiling let boil for 5 minutes or so then remove from heat. Let cool to room temp. Then add Liter of Everclear and stir. Remember its deliciously stronger when not chilled but watch out because when it is chilled it dangerously delicious!
  • 3. place in empty wine bottles or whatever you have with one cinnamon stick per container, if you have more than 3 containers just break them in half. When we first made this we just used the juice containers and a glass jar. Then Friends gave us Empty Grey Goose and X Rated bottles so now we use them and wash reuse them.

Time 50m

Yield 6 oz. servings/2gal, 18-22 serving(s)

Number Of Ingredients 8

1 gallon apple juice (unfiltered or the kind in the refrigerated section)
1 gallon apple cider
1/2 cup sugar
1/2 cup light brown sugar
4 -6 cinnamon sticks (or 2 tablespoons of ground cinnamon if no cinnamon sticks)
2 tablespoons mulling spices (if no mulling spices, add the spices you add to apple pie, such as 3 cardamom cloves, 1/2 tsp ground)
1 tablespoon lemon juice (may use 1 tbsp lemon zest instead)
1 liter ever clear grain alcohol (if you would like it stronger add up to a 1/2 liter more of Ever Clear but remember Ever Clear is 15)

Steps:

  • Bring all ingredients EXCEPT EVERCLEAR to a soft boil. Simmer for 30-45 minutes.
  • Let cool and stir in Everclear. If you prefer a clear liquid, strain the mixture before adding the Everclear.
  • I store the majority of it in the juice bottles that it came inches For gifts, I either pour into a mason jar with a fresh cinnamon stick or pretty glass bottle with a cork or stopper.
  • Store in the fridge, serve hot, like regular cider or iced. Also great for mixing into other cocktails.
  • I serve this with Arroz con Leche on cold nights for dessert.

Tips:

  • For the best flavor, use fresh, ripe apples. Granny Smith, Honeycrisp, and Braeburn are all good choices.
  • Peel, core, and slice the apples thinly. This will help them cook evenly and absorb the spices.
  • Use a generous amount of spices, such as cinnamon, nutmeg, and ginger. These spices will give the schnapps a warm, autumnal flavor.
  • Simmer the apples and spices in a mixture of sugar and water until the apples are soft and the mixture has thickened. This can take about 30 minutes.
  • Strain the apple mixture through a cheesecloth-lined colander. This will remove the solids and leave you with a smooth, clear schnapps.
  • Add vodka to the apple mixture and stir until combined. The amount of vodka you add will determine the strength of the schnapps.
  • Bottle the schnapps and let it age for at least 2 weeks before drinking. This will allow the flavors to meld and develop.

Conclusion:

Apple pie schnapps is a delicious and easy-to-make liqueur that is perfect for enjoying on a cold winter day. With its warm, autumnal flavors, it is sure to become a favorite of your friends and family. So next time you have a few extra apples on hand, give this recipe a try. You won't be disappointed!
