RICOTTA TOASTS WITH WALNUT DUKKAH, OLIVE OIL AND HONEY

Ricotta Toasts with Walnut Dukkah, Olive Oil and Honey image

Dukkah, an Egyptian condiment typically served with bread or vegetables, is a mixture of nuts, seeds and spices that are dry toasted until very fragrant and then pounded (or ground). This version is made with walnuts and gets a smoky kick from the addition of smoked paprika, making it perfect sprinkled on creamy ricotta toasts with honey and olive oil.

Time 15m

Yield 4 servings

Number Of Ingredients 11

4 slices rustic boule or multi-grain sandwich bread
Extra-virgin olive oil, for brushing and drizzling
2 tablespoons coriander seeds
1 tablespoon cumin seeds
1 tablespoon fennel seeds
1 cup walnuts
2 tablespoons toasted sesame seeds
2 teaspoons smoked paprika
Flaky sea salt
1 cup ricotta, preferably fresh
Honey, for drizzling

Steps:

  • Preheat the oven to 400 degrees F. Prepare a grill or cast-iron grill pan for medium-high heat.
  • Spread the walnuts on a baking sheet and toast in the oven until lightly browned, about 8 minutes.
  • Brush the bread all over with oil. Grill, turning, until lightly charred, about 5 minutes. (Alternatively, toast the bread in a toaster or under the broiler.)
  • Meanwhile, toast the coriander, cumin and fennel seeds in a small skillet over medium heat, shaking the pan frequently, until very fragrant, 2 to 4 minutes.
  • Transfer the spices to a food processor and process until finely crushed. Add the walnuts and pulse until the nuts are finely ground. Add the toasted sesame seeds and paprika; pulse just to mix. Season the dukkah with salt.

Provided by Claire Thomas : Food Network

Time 1h40m

Yield 2 servings

Number Of Ingredients 13

Two 1-inch-thick slices sourdough bread, lightly toasted
1/2 cup Homemade Ricotta, recipe follows
1/4 cup Berry Quick Jam, recipe follows
2 cups whole milk
1 cup heavy cream
2 tablespoons lemon juice
3/4 teaspoon kosher salt
2 cups chopped strawberries
1 cup raspberries
1/2 cup sugar
2 lemons, zested and juiced
2 vanilla beans, split and scraped
1 teaspoon balsamic vinegar

Steps:

  • Cover the toast with a generous portion of Homemade Ricotta and top with the Berry Quick Jam.
  • Heat the milk and cream in a medium pot over medium heat until just bubbling. Remove from the heat and stir in the lemon juice and salt. Wait until the milk begins to curdle, 3 to 5 minutes; do not stir again. Strain through cheesecloth and let sit for 1 hour over a colander to drain completely. Store in the refrigerator.
  • Combine the strawberries, raspberries, sugar, lemon zest and juice and vanilla beans in a medium pot over medium heat. Cook until the syrup sticks to a metal spoon, about 20 minutes, stirring every now and then. Stir in the vinegar and remove from the heat. Pour into clean jars, close and bring to room temperature (or use an ice bath to speed this up). Keep in the fridge for up to 2 weeks.

Tips:

  • Use a variety of apples for a more complex flavor: Granny Smith, Honeycrisp, and Braeburn are all good choices.
  • If you don't have time to make your own pie crust, you can use a store-bought one.
  • Be sure to drain the ricotta cheese well before using it in the filling or topping.
  • Add a sprinkle of cinnamon or nutmeg to the filling for extra flavor.
  • Toast the bread until it is golden brown and crispy.
  • Serve the toast immediately with the warm apple pie filling and ricotta cheese topping.
