Yield 16

Number Of Ingredients 8

4 ½ cups white sugar
1 cup cornstarch
2 teaspoons ground cinnamon
¼ teaspoon ground nutmeg
1 teaspoon salt
10 cups water
3 tablespoons lemon juice
7 quarts peeled, cored and sliced apples

Steps:

  • Place a rack in the bottom of a large stock pot. Fill pot with hot water. Sterilize 7 1-quart canning jars, 7 lids, and 7 rings by placing on rack, jars upright. Bring water to a boil. Boil 10 minutes. Remove with a holder and allow jars to air-dry. Save water for processing apples.
  • Combine sugar, cornstarch, cinnamon, nutmeg, salt, and water in a large saucepan. Place over high heat and cook until thick and bubbly, stirring frequently. Remove from heat and stir in lemon juice.
  • Tightly pack apples into sterilized jars. Slowly pour syrup over apples, covering them completely. Gently tap jars on countertop to allow air bubbles to rise. Screw lids on jars.
  • Carefully lower jars into pot using a holder. Leave a 2 inch space between jars. Add more boiling water if necessary, until tops of jars are covered by 2 inches of water. Bring water to a full boil, then cover and process for 30 minutes.
  • Remove jars from pot and place on cloth-covered or wood surface, several inches apart, until cool. Once cool, press top of each lid with finger, ensuring that seal is tight (lid doesn't move up or down at all). Sealed jars can be stored for up to a year.

APPLE PIE IN A BOTTLE

Apple Pie in a Bottle image

Here's a drink that's great to take on camping trips with good friends, perfect for sharing around the campfire. This is my own recipe that we take to SCA camping events in the Pacific Northwest (other folks have their "secret" recipes they don't share). You know you have good Apple Pie when you take a sip and you can even taste the crust. :) You don't want to miss out on this one!

Time 5m

Yield 32 ounces

Number Of Ingredients 7

16 ounces organic apple juice
8 ounces absolut red label vodka (100 proof)
4 ounces vanilla Schnapps
8 ounces butterscotch schnapps
1/2 teaspoon lemon juice
1/4 teaspoon apple pie spice
2 cinnamon sticks

Steps:

  • Mix together liquid ingredients; stir in apple pie spice.
  • Pour into a 32 oz bottle, add the cinnamon sticks, and refrigerate for at least a week before serving. (We often just store it in our cool garage, which works fine.).
  • Apple Pie is a group drink, often shared straight out of the bottle with folks all sitting around the campfire.
  • Notes: if you'd like your apple pie somewhat less sweet, add some more organic cider and/or regular apple cider to it, to taste. Also, you can use regular apple cider for the entire amount rather than organic, if you need to, but the organic has a different flavor and a much different "mouth feel" because it has more pulp in it. Get and use the organic, if you can.
  • Note #2: Absolut Red Label has gotten more difficult to find these days. Try to use higher proof vodka if you can, but if the Red Label is too expensive or unavailable, you can substitute another equal quality high proof vodka. Potato vodka can also be used, but check the taste before using to make sure it's something you like the taste of and that it's not too sweet for you. Higher proof is generally drier in taste.

My children's school used this recipe as a fundraiser at Thanksgiving. It went over really well! The recipe is from a friend's 4H cookbook. I used it to make apple crisp. Easy and yummy! Can be doubled.

Tips:

  • Choose the right apples: Use a variety of apples that will hold their shape when cooked, such as Granny Smith, Honeycrisp, or Braeburn.
  • Peel and core the apples thinly: This will help the apples cook evenly.
  • Use a sharp knife to cut the apples into thin slices: This will also help them cook evenly.
  • Pack the apples tightly into the jars: This will help to prevent them from floating to the top of the jar.
  • Leave 1 inch of headspace at the top of the jars: This will allow for expansion during processing.
  • Process the jars in a boiling water bath for the recommended amount of time: This will help to seal the jars and prevent spoilage.
  • Store the jars in a cool, dark place: This will help to preserve the quality of the apple pie filling.

Conclusion:

Making apple pie in a bottle is a great way to enjoy this classic dessert all year long. The filling is easy to make and can be used in a variety of ways, such as pies, tarts, and cobblers. Plus, it's a great way to use up extra apples. With a little planning and effort, you can enjoy delicious homemade apple pie filling all year long.
