AUTUMN APPLE-PEAR CHUTNEY

Autumn Apple-Pear Chutney image

This deeply spiced chutney is one of the last things I make each fall. I love it alongside roasted root vegetables and in place of applesauce with Hanukkah latkes. I don't typically peel pears, but if yours have tough, pebbly skin, you might want to peel them.

Provided by Marisa McClellan

Time 1h55m

Yield 24

Number Of Ingredients 13

1 ½ pounds apples - peeled, cored, and diced
1 ½ pounds pears - peeled, cored, and diced
1 large yellow onion, minced
2 cups cider vinegar
1 ½ cups white sugar
1 ½ cups dried cherries
1 lemon, seeded and chopped
2 tablespoons yellow mustard seeds
2 teaspoons salt
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1 teaspoon ground allspice
½ teaspoon ground cloves

Steps:

  • Submerge 6 empty half-pint jars on a rack in a large pot of water. Cover and bring to a rolling boil, then reduce heat to low to keep jars warm until ready to fill.
  • Combine apples, pears, onion, vinegar, sugar, cherries, lemon, mustard seeds, salt, cinnamon, ginger, allspice, and cloves in a wide, nonreactive 4-quart pot over high heat and bring to a boil. Once it bubbles, reduce heat to medium; simmer gently, stirring often, until mixture is thickened and a spoon drug through leaves a trail that doesn't fill in immediately, about 1 hour. Toward the end of the cooking, make sure to stir every minute or so to prevent scorching. Remove from heat.
  • Working with one jar at a time, remove empty jars from canning pot. Using a wide-mouth funnel, carefully ladle jam into jars, leaving 1/2 inch for headspace. Use a clean wooden chopstick to work air bubbles out of jars. Check headspace again and add more chutney if necessary to bring to 1/2 inch from the top.
  • Wipe jar rims, apply lids and rings (not too tightly), and return jars to canning pot. Cover pot and return water to a rolling boil. Process for 10 minutes. Turn off heat, remove pot lid, and let jars stand in the cooling water 5 minutes to help ensure a good vacuum seal.
  • Move jars to a folded kitchen towel or wooden cutting board to cool completely before checking seals. Any unsealed jars should be refrigerated and eaten promptly. Store sealed jars in a cool, dark place. Sealed jars are shelf-stable at least 1 year.

ALOO PIE WITH APPLE-MANGO CHUTNEY

Aloo Pie with Apple-Mango Chutney image

Provided by Food Network

Time 1h40m

Yield 8 pies; 4 servings of 2 pies each

Number Of Ingredients 23

2 firm ripe mangoes, peeled and diced
1 Golden Delicious apple, peeled and diced
1/4 cup packed light brown sugar
1 tablespoon fresh peeled and thinly sliced ginger
1/2 teaspoon minced hot chile pepper, such as serrano
1/4 cup apple cider vinegar
Kosher salt and freshly ground pepper
1/4 cup vegetable oil
3 large or 4 medium red skin potatoes (about 1 pound), peeled and diced
1/2 sweet onion, finely chopped
1/4 cup finely chopped green bell pepper
1/4 cup finely chopped celery
1 clove garlic, minced
1 teaspoon ground cumin
Kosher salt and freshly ground pepper
1 1/2 cups vegetable broth
1/2 pound peeled and deveined jumbo shrimp (11 to 15 count), chopped
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon Madras curry powder
Kosher salt
3/4 cups water
4 cups of canola oil, for frying

Steps:

  • For the chutney: Place the mangoes, apple, brown sugar, ginger, and hot pepper in a food processor and pulse until the mixture is chunky and well combined. Transfer to a medium saucepot and bring to a simmer over medium-high heat. Add the vinegar, season to taste with salt and pepper, and continue to simmer until the fruit is tender and the vinegar has mellowed slightly, stirring occasionally to prevent sticking. Remove from the heat and set aside. Serve warm or at room temperature.
  • For the pie filling: In a large skillet, heat the vegetable oil over medium-high heat. Add the potato, onion, pepper, celery, and garlic and cook until softened, about 6 minutes. Add the cumin, salt, and pepper. Mix well to ensure that all the vegetables are seasoned. Once the potatoes start to brown, add the vegetable broth, bring to a boil then reduce heat to simmer. Once the liquid begins to reduce add the shrimp and cover skillet. Remove the cover once all the liquid has been absorbed, about 25 minutes. Remove from the heat and allow to cool to room temperature.
  • For the dough: In a large mixing bowl, combine the flour, baking powder, curry powder, and 1/2 teaspoon salt. Slowly add the water until the dough is well formed and soft but not sticky (you may not use all the water). Knead for 2 minutes on a lightly floured surface and then place in a large bowl to rest for at least 15 minutes. Cover the bowl with a moist cloth or flip the bowl over on a clean prep surface and let sit until ready to use.
  • Heat the oil in a pot to 360 degrees F. Divide the dough into 8 balls. Flatten into 4-inch circles and place a heaping spoonful of mixture in the center, taking care not to overfill. Wet one edge with water, fold over and seal by pinching the edges with fingers or floured fork. Gently add each pie into the hot oil and fry on both sides until golden brown, 3 to 5 minutes. Drain on brown paper or paper towels.
  • Serve the pies with the apple-mango chutney.

Tips:

  • Choose the right apples: Use firm, tart apples like Granny Smith or Braeburn. These apples hold their shape well during cooking and provide a nice balance of sweetness and tartness.
  • Peel and core the apples: Before cooking, peel and core the apples. This will help to remove any unwanted bitterness and make the chutney smoother.
  • Cook the apples until they are soft: Cook the apples over medium heat, stirring frequently, until they are soft and starting to break down. This will take about 15-20 minutes.
  • Add the sugar and spices: Once the apples are soft, add the sugar, spices, and vinegar. Bring the mixture to a boil, then reduce the heat and simmer for 15-20 minutes, or until the chutney has thickened.
  • Let the chutney cool: Once the chutney is cooked, let it cool completely before storing. This will allow the flavors to develop and meld together.

Conclusion:

Apple pie chutney is a delicious and versatile condiment that can be enjoyed in many different ways. It is perfect for serving with roasted meats, grilled fish, or as a spread for sandwiches and crackers. It can also be used as a glaze for chicken or pork, or as a filling for pies and tarts. With its sweet and tangy flavor, apple pie chutney is a surefire hit that will please everyone at your table.
